    Sweet Short Crust Pastry Mincemeat Slice
    How to Recipe Demonstration in the Bakery
    Makes 20 slices
    Recipe Ingredients:
    White Flour 680g
    Water 85g
    Castor sugar 170g
    Cake margarine 170g
    White shortening 170g
    Homemade or shop sweet mincemeat 1126g

    Method:
    1. Please remember to Subscribe to my channel it’s free
    2. Sieve flour into a bowl
    3. Add the fat into the flour
    4. Now work the fat into the flour, now making a nice fine crumb
    5. Now make a well in the middle
    6. Now with a 2nd bowl add in water & mix in the caster sugar
    7. Now add in the mixed water & sugar into to flour
    8. Now mix lightly into a pastry, not bread dough
    9. Now finish on the table
    10. Now spilt into 2 parts, top and bottom shape into a ball
    11. Now you need a baking tray 30 x 40cm with some baking paper { follow my video or bakers tip to save time Get 2 trays with baking paper on them } 1 is going to be the top and the other the bottom
    12. Now roll out the pastry with rolling pin to about 3 - 4 mm onto the paper {top and bottom}
    13. Now you are ready to dock the {top and bottom}
    14. Now you can put your pastry onto the tray, just get a knife and cut off the edges of the pastry
    15. Now pop the trays into the freezer for 10 min
    16. Now fill up with homemade or bought sweet mincemeat 1126g spread out evenly
    17. Now take your pastry top out of the freezer, and put on the top of mincemeat
    18. Now you are ready for baking
    19. Now bake at 380 - 400 f for about 25 -35 min
    20. Well done bakers now you have baked the slice
    21. Just one thing now pop some caster sugar on the tops
    22. You will have to wait a good hour to cool down to cut them up
    23. Now you can mark and cut them up, you will get 20 nice size slices out of the tray

    I just found you and can't wait to make this slice. Shortcrust using half plain half bread flour sounds very interesting and certainly looks lovely so I'm going to make this tomorrow. Thanks for a great easy to follow tutorial.

    This was my Dads favorite slice. He used to call it Fly Cemetery. Haaa Haaaa :)

      Thank you the wheels are from a bakey wholesale shop, cost was in 1988 £25 not sure cost today

    In New Zealand we make these with white icing on the top and call them fly cemetery’s 😂

      I do them with white icing as well, only at Christmas, over here the fly cemetery are puff mince slice 😋 😅

    Interested to hear you use bread flour Steve for this pastry. Is there a benefit in doing this, does it somehow make the pastry shorter, more tender?

      I tend to use a lower protein bread flour, not the very strongest, or sometimes I mix plan white & bread flour, it's difficult to explain but it makes the pastry dough better than just cake flour, oddly I have been doing this for so long I don't remember 😀 the results talk for it's self, funny thing is people always say they have never tasted pastry like it before, to me it's just short paste 😀 and for savoury it's just the same recipe with out the sugar 😀

    Can you show us how to make , Soft cream buns, chelsea buns and scottish morning rolls?

      I have the videos on here already, but the only one I've am doing soon is the Scottish rolls, but to be honest they are the same as my baps rolls video and the only difference is I would use lard to replace the white shorting 😀

    What is docking and did you put both top and bottom in the freezer?

      Docking pastry means to prick a pie crust with a fork before baking. This technique is a simple way to poke holes in the pastry dough. This allows the steam to escape so that the pie crust doesn't puff up in the oven. Usually, this technique is used when blind baking a pie crust before filling, yes I do before going into the freezer the base and the too after it comes out 😀

    Hey. What is the white shortening, where do I buy it and how come you mix the sugar with the water. Cheers

      Water in to sugar to help it mix in better, white shorting can be found in Sainsbury's or other supermarkets near the butter, or you can also use white frying fat which is very similar 😀 laters Steve 😀

      Yes Cake margarine is like a butter made with vegetable fat and White shortening is the same but white, in the recipe you can replace the Marg with butter and white shorting with lard Laters Steve

    What flour do you use

      In the bakery I just use bread flour, but you can use soft cake, GF flour, plan flour, but I find the bread flour the best 👌 laters Steve 😋
