EPIC Potato Salad Recipe -Japanese Style: Fresh, Tasty & Balanced

This is my mom’s recipe which I always loved. My husband, who refused to eat any potato salad, tried my version and now he is obsessed with it lol. It tastes the BEST if you have homemade Mayo. Perfect for potlucks and holiday dinners.

Ingredients:
2 large eggs
2 lbs of potatoes (I used russet, but any type will do)
1 cup of chopped carrots
½ bound of Persian or Japanese cucumbers (thin skin and crunchy)
¼ teaspoon of salt for sliced cucumbers
1 cup of minced onions
3 slices of ham (optional)
½ tablespoon of sugar
½ cup of mayonnaise
½ tablespoon of rice vinegar
½ teaspoon of salt (add more as needed)
¼ heaping teaspoon of black pepper
