Lemon Blueberry Cake
Ingredients
For the cake:
* 1-2 tablespoons each, butter and flour for preparing the cake tins
* 1 cup unsalted butter softened to room temperature
* 2 cups granulated sugar
* 3 eggs at room temperature
* 1 cup milk at room temperature
* juice of 1 lemon
* zest of 2 lemons
* 1 teaspoon vanilla extract
* 3 1/4 cups all purpose flour
* 3 teaspoons baking powder
* 1 teaspoon salt
* 2 cups blueberries fresh or frozen
For the frosting:
* 1 cup unsalted butter softened to room temperature
* 1/2 cup cream cheese plain, full fat, at room temperature
* 4 cups powdered sugar sifted to remove lumps
* a pinch of salt
* 1 tablespoon heavy cream
* zest of 1 lemon
For assembly:
* 3-4 tablespoons blueberry jam
