Making shortcut kimchi because we finish it faster | I don’t like sour kimchi | used apple sauce

    SHORTCUT KIMCHI
    INGREDIENTS
    3-4 lbs napa cabbage
    1 cup sea salt/ kosher salt
    1 cup room temp
    KIMCHI PASTE
    3/4 cup gochugaru (korean pepper flakes)
    3/4 cup hot water
    3.2oz apple sauce packet (1 packet)*
    6 TBSP fish sauce
    3 TBSP sugar
    8-10 cloves minced garlic
    12 scallion, cut 1.5-2 inch wide
    1 cup carrots, julienne
    *may substitute apple sauce with 3/4 cup apple juice
    1. Cut Napa cabbage into quarters. Cut the core off Napa cabbage an then cut 1.5-2 inch wide.
    2. Sprinkle 1 cup of sea salt and 1 cup water over your Napa cabbage. Combine well. Allow this to sit while you prep the rest of your ingredients and allow this to sit for 30 mins. (Note: I sprinkled 1/2 cup of sea salt and water at a time)
    3. After 30 minutes, your Napa cabbage with decrease in size. Rinse and wash throughly under cold water 2-3x. On the last round, make sure you squeeze out any extra liquid
    4. Make your KIMCHI PASTE. Mix all of your ingredients listed under KIMCHI PASTE. Measurements can be adjusted according to preference
    5. Now combine your Napa cabbage with your kimchi paste. Mix well. Store in an air tight container at room temp for a couple of hours and then move into the fridge.
    Note: I love eating my kimchi as soon as I finish make it but it’s all preference on how fermented/ sour you like it. Kimchi is good for 3-6 months.

    I made a half batch and it came out great! Initially it was quite sweet but it toned down later on. Can’t wait for it to ferment a bit more. Thank you for the recipe!

    It’s usually called 겉절이 (kut-juh-rhee)in Korean. We always go for this over traditional kimchi because it’s so much faster & gotta love that fresh taste!

      Thank you! I looked up a recipe in Korean and see that plum sauce can be used. I don't have any applesauce at the moment, so I'm pleased as punch. =^_^=

    Glad I’m not the only one who likes Kimchi when it’s at its freshest! All my friends like when it gets sour, that’s why I prefer to make it at home using Manngchi’s Emergency Kimchi as a quick way and eat it within a week or so.
    Best way to use a lot is just make a big thing of kimchi fried rice 😋

      I tried to make homemade kimchi a week ago, it was amazing the first day, really good on the second day aswell, but it started to get kinda funky/vinegary on the fourth day, and once i put it in the fridge it became way too sour and it smelled awful when i opened it up, it is possible i didn't ferment it properly but honestly i would rather just not risk it and eat fresh spicy kimchi.

      @@sleepytubbs9405 i followed Joshua Weissmans recipe and he said 4 - 7 days before putting it in the fridge, but yeah, i made a new batch and put it in the fridge immideatly now.

    Get a julienneing mandoline! It is SO much faster than julienneing with a knife, it's a life-changer for making kimchi.

    Huh, apple juice or apple sauce! I've never thought about that.
    I like the middle pieces of the cabbage the most, too.
    Thanks to one of your commenters, I see that plum sauce can be used as well. I might have to make some shortcut kimchi tonight!

    Wait does a kimchi container make a difference with the fermentation? I usually put my kimchi in any big container I can find however there's a lot of air space once we start eating it 🙄 so sometimes it tastes fizzy LOL

    I love cabbage but have tried traditional Kimchi so many times and just can't get over the taste.

      A lot of recipes call for julienned Asian pear so apple sauce isn't that far off. And it's Korean

    julienning is also my least favorite veg prep. Try a julienne peeler. The sticks aren't as big and it looks more...rustic, but it takes a fraction of the time.
