    Very Nice, Koji Kitchen. Having lived for many years in Japan I am addicted to egg salad sandos. Bought them often in konbinis and also made at home. I make them today too although I live now in Romania. Sometimes I pass both the yolk and the white of the eggs in a strainer to make it more fluffy. Bread was better in Japan though, thicker slices, fluffier and with a small sweetness. Kewpie mayo is superior. Japanese mustard can be very spicy, French Dijon works as well. A little bit of sugar is very common in many Japanese recipes. It lifts up flavors. When I cook Italian I often add some ketchup for the sugar content. We lived in Fukuoka and I was on my bicycle every day all year, most of the time with an egg salad sando and a chu-hi in the basket. Arigato and have a good 2025!

    I've never thought to blend butter with mustard. These sandwiches look delicious.

    By far the best egg salad sandwich I have ever had was in Tokyo. I got it in a 7/11 shop of all places. I have tried to replicate it at home but it is not the same. I did find Kewpie mayo, much better than North American mayo. I will try your recipe and hope for the best.

      Not surprised that you liked the sandwich in 7-Eleven. I lived next to one for many years and we got to know the family who ran the shop. They had excellent egg sandos. They did not make them themselves though, but they were picky with the quality. Yes, Kewpie is very good, more spices and flavors added than in US or European mayo.

    i like the same with TOAST. I used Duck eggs. I think they taste better.
