One of my all-time favourite comfort foods is the Kundapur Ghee Roast. A dish born decades ago in a tiny eatery called Shetty Lunch Home in the then sleepy hamlet of Kundapur along the South Canara coastline. Over the years, this spicy preparation has conquered palates across the country and beyond. What gives this dish its soul is the roasted Kundapur Masala, that manifests itself in the spicy, tangy, robust flavours of this preparation. Over the years, I have tasted many ghee roasts and watched its making in illustrious kitchens, including Shetty Lunch Home. This recipe, my ode to the dish and its creators, is versatile enough to be made not only with chicken, the original chicken ghee roast, but also with prawns, paneer or any veggie of your choice. Enjoy, stay safe and happy cooking.
1 kg chicken or prawn or vegetable of your choice
For the marinade:
4 to 5 tbsp yoghurt
1 to 1 ½ tsp turmeric powder
2 tbsp chilli powder
1 to 2 tsp salt (to taste)
1 tsp lemon juice/ vinegar
For the Kundapur Masala
8 dried Guntur chillies
10 dried Byadgi chillies
2 Tsp peppercorns
1 tsp cumin seeds
1/2 tsp mustard seeds
1/2 tsp fenugreek seeds
2 tbsp coriander seeds
2 tbsp thick tamarind pulp
16 - 20 garlic cloves
Water as required
To cook:
6 to 8 tbsp ghee
20-30 nos curry leaves
Salt as required
1 tsp jaggery
1 tsp vinegar
A pinch of coriander powder

I am fully aware about almost all restaurants pre-cook, pre-boil, blanch, partially fry, or even freeze the meat, vegetables, rice and noodles for days all together, for the sake of preparing and serving the dish to customers thereby saving the time and cost.
That is why many a time, the restaurant food loses the authentic flavor, and also shelf life.
It is also common knowledge that many restaurants take short cuts to cut cost which I do not feel appropriate to discuss in length, as you too might have experienced given the number of eating places you have featured so far.

Not Fair you are getting your fix. I'm dying for someone to give a recipe to get those fantastic soft thick but crispy dosays of Bengaluru. I'm not asking CTR or VB level but something close.
I have tried everything but failed to get the same texture. I noticed most use a more liquid batter. It seems more fermented than what I have been able to get or is it baking powder magic.? I have timed the dosas on videos and streets of Bengaluru 6-8 minutes seems the time taken usually. Is it the thick steel griddle which make the difference? I have tried everything low heat initially a bit more later on. Slightly high initially but low later on and low throughout all kinds of permutations and combinations. Nothing gets me the same even texture, even slow fermentation for 6-24 hours . Yup rigged a temperature control box too to no avail. Please please get me some info, something!!🙏🙏

@@70newlifetwo cups of dosa rice, 1/4 cup of whole urad(round one white), 1 tsp methi soak..for abt 8 hrs...when grinding soak half cup beaten rice and grind all together..add 1 spoon of sugar and salt beat well by hand and keep for fermentation...next morning add 2 cups of rice flour add proper water to make thick batter...now u can make dosa...heat dosa thava sprinkle some cold water keep in low flame now make dosa and now keep in medium heat add lots of butter or ghee on dosa let it roast in ghee ..ur dosa is done

Looks very delicious! One thing I noticed that you may want to refrain from, is that you tasted the marinade after it was on the raw chicken.

When I saw ur video where u went to sheety lunch and show how they prepare. I try the same way I slightly got the taste but I need the exact taste. I want to try this recipe but I saw in that video she didn't add curd or chilli powder no curry leave. Will this recipe exactly taste like sheety lunch home. You have mentioned Guntur chillies and Kashmir chillies but she told she used Byadagi chilli. U have added vinger but they didn't add vinger or lemon. She even put cashewnut u didn't.
Please clarify my doubt want to make the exact recipe as I cant go to the restaurant and have.
If any one tried this recipe please let me know. Cant wait to make this.
I have the same doubts. Check out Ranveer Brar's recipe. That one seems closer. If you try it, do tell me how it compared to the original.

Well, Harish, I love cooking, but haven’t been able to do any in the last few years. The current situation has allowed me to go back to cooking. Cooking and shooting simultaneously isn’t easy, but I enjoyed the process. Tasting and reviewing has its own challenges, but isn’t as physically demanding as cooking and shooting.

You have to add fennel seed to the masala while grinding , it gives a good flavor 😋

Kripal, try using a "Chef's Apron"" while cooking your favorite recipe, that will protect your smart clothing from splattering sauces or oil as well.
I had seen your earlier episode on Shetty Lunch home Kundapur chicken prepared by the lady chef, (whom you shown a bit in this video as well) which was really red in color, the reason being the masala itself, or some food color added to it to give an eye catching appeal.
Anyway, happy cooking, happy shooting and above all, "Happy Eating home cooked food by Kripal himself.!!".

While cooking marinated Chicken in ghee, i had a query wouldn't stirring and tossing too much of the chicken make it more lossened and skin out the chicken from the flesh???
No, it doesn’t. You need to roast the chicken in the ghee without allowing the marinade to stick to the bottom of the pan.
Super Brother, you reminded my Manipal days. I studied and worked in Manipal. Chiken ghee rost is one of my favorite dish and I use to order most of the times when ever I visit Lake view restaurant in Manipal. Few years before I tried one time making in US but it come out bad. I love your recipe and I will try once again soon.

I watched your video shot at Shetty's Lunch Home Mangalore. That recipe of ghee roast featured ginger and not garlic. Where do the cashewnuts come in. The Shettys added it to the masala. I've seen others use cashew-halves or cashewpaste.

Everything was right in the video except that burnt dry masala ... Chillies are not meant to be burnt after dry roasting, you just want to remove the excess moisture

Made Prawn ghee roast watching this video in Seattle- was worried the spices here will not give the same flavor as back home - but was so wrong - taste took me back to Mangalore days! Whoever invented this Kundapur signature recipe is a genius and you Sir have demonstrated and taught the intricacies of the recipe like no one else could!

Sir, I tried this recipe but I didn’t like it.
It's not the same what is available in hotels. The colour here is blackish red as the ingredients are roasted may be a little more and here the chicken is marinated unlike in hotels. Only after tasting can know the difference of real ghee roast
What I find weird is that he's adding a lot of ingredients that Shetty Lunch Home isn't adding, as shown in his own video shot at that place. I'm sure this one is more flavorful. Which is the authentic recipe then though?
