I am French but I have greek family and I used to come every summer for a month to Greece. The food, the country, the people, the landscapes, the culture is so so unique. Cucumber can also work. I often make aggourokeftedes (Cucumber fritters), they come up very close to zucchini fritters. One can never go wrong with vegetables and aromatics. As I watched Akis adding that paprika over the yogurt, I immediately wanted to add a pinch of cinnamon, because I find the combination of hot chili and cinnamon very delicious, especially on a savory appetizer. I infuse cinnamon stick and various hot peppers in green greek olive oil. It's heavenly delicious.

I've been to Greece twenty+ times, but have only really seen these on menus in Santorini.

@@Egyptologist777 Why would you recommend pretty much the only greek island everyone knows? How about the other few dozens big islands that are as great as Santorini but less worn? Skyros, Samos, Karpathos, I'd even recommend Crete over Santorini and Mykonos.

I usually have Bulgarian "feta" cheese on hand (they can still call it that in the US). I wonder what I should call my tomato quenelles.

That looks really tasty, and I look forward to try this recipe. I have been to several greek islands, but have never seen this dish in a restaurant (only the zuchinni fritters), I guess I must have gone to the wrong places. Or is a dish served mainly on the mainland ?
It's very popular in Santorini and some other islands, but definitely not on all the menus and not as omnipresent and as popular as zucchini fritters.
I did try it in Santorini. It is incredible: very important to use the best, sweetest tomatoes you can find!

If you having a very salted 100% to feta cheese Don't have add a salt sliced with knife to plate a cube without crasheds a kitchen.
