You won't get the same result as what he has done in this video if you still have the seeds and or skin in your product. You've made a tomato puree similar to Hunts in the US and the seeds and skin may make your sauce bitter. What he has made is passatta and it is much sweeter without the seeds and skins than an American style tomato puree. IMO

Add a little salt, a little sugar, fresh chopped parsley and pour a little oil on top of each bottle. And that is all! We have the taste of fresh tomatoes all winter.

I run my tomatoes through a tomato press and I dehydrate the skin, seeds and the bit of pulp that gets removed to make tomato powder which I use to thicken/flavor soup or I add it into sausages. It is nice in a stir fry as well.
I have an easier process. I purée my tomatoes raw, seeds, skin in my Vitamix blender. I cook it until it is of the consistency that I like and fill my jars as the sauce is boiling. Doing this with hot tomato sauce will not require you to boil the jars to seal them. They will automatically seal. I did over 150 jars this fall for my family. So delicious and no waste. The most nutrients are in the skin and seeds, so don’t discard it.

Have you ever calculate how many jars can make from a kilo of tomatoes ? Here in malta i see it a bit of expensive to compare from ready manufactured jar of tomatoes . By the way it was very interesting and thanks as always .
Inside a sterilized jar it can be kept for a year. You just need to save it away from sunlight at room temperature. After you open the jar, you need to consume the tomato sauce in a week.

I have seen several videos from Italian people making/storing sauce this way. What keeps botulism from happening? Canning companies say you should boil these jars with the sauce in a water bath.
As kowboy I am doing the same. 2 hours at 160 degrees Celsius in the oven. Then putting in my biggest form for cheese for 30minutes and then with the food processor making a puree. I have many green in the garden which probably will never get rippen 🙁🙁🙁.

Never trow away the juice off the tomatoes that's where all the flavor is in and vitamins just cook the saus down to the consistency you like and dont trow the skin away also give it to your chickens dont waste any food

I bake too for about 45 mins. (Slice in half and drizzle olive oil and salt and pepper) and bake. I don’t need to peel either. They blend beautifully.

I keep all the tomato water, add a bit of ACV, jar and refrigerate. Its a fantastic substitute for V8 type drink in the winter.
