    Hey! I'm from Wales but teaching in a school in France. I am going to show the students this video (because I am doing a lesson about traditional foods from my country) but I can't quite make out what accent you have and I know they students will ask because they always do! Do you mind saying where you're from? Great video by the way! Nailed the Welsh rarebit! :)

      Hi Scarlett, that’s fantastic! Wow! Yes please do show the video, that’s really cool! That accent you’re hearing is South African, although I live in London and have an English father, but I was born and grew up in South Africa. Glad you enjoyed the video, I hope my interpretation of a Welsh Rarebit will help you in your class. My grandmother used to make this for us as kids, so it’s been in the family forever. Enjoy!

      ​@@chas2077 Traditionally uses Welsh Caerphilly cheese which we call caws Caerffili, a Welsh ale or something (I use either a real ale or cider as Caerphilly already has a tangy apple taste), origins of mustard aren't defined, Worcester sauce specifically is English but is basically a modern Roman garum containing Asian tamarind which is popular Indian ingredient, bechamel is French.

    This recipe looks very delicious! I’m not very familiar with beer, what types of beer would be the best for this recipe?
    I live in the US so I’m not sure what beers would be available or if I would need to buy an import.

      Definitely don’t import anything, any beer will work. Preferably an ale, lager or pilsner. I wouldn’t use a stout or a porter etc. good luck! Thanks for watching

    dat was funny 😁. Growing up I always thought my dad was saying Welsh rabbit.. I knew there was no rabbit in it?? I just trusted that's what it was called. Today I have learned the error of my ways.

    Beautifully done, correct way to make a bechamel sauce ( I've seen others use mayonnaise 😮) and an appreciation of a good mature ENGLISH cheddar cheese.

    I'm playing a game called 'Chef Life' and this is a recipe in the game...that's what brought me here. They add pancetta to the recipe but just the cheese sauce and toast sounds delicious as well.

    Regarding the beer, use a porter or stout. I make mine with Guneses. I don't need the whole pint so it gives me an excuse for not wasting the extra. 🙂

    I've got to make this again. I used to make it, with milk in the sauce though, for my little sons 30 years ago. I have never like grilled cheese sandwiches but Welsh Rarebit , he'll yes. Also buttered toasted rye bread with thin slices of Xtra sharp cheddar covering each slice then thin slices of tomato on top. Throw under a broiler til bubbly yummm

    I like english muffins. And I add some bacon. Along with that, I’ve even added some steamed broccoli florets and chopped cherry tomatoes. Stoffer’s makes it, but they quit selling it in Texas. I’ve been craving it for years. I’ve looked at several people’s recipes for this and your’s looks like the best. So, gonna make it and I’ll get back to you! 🤞🏼

    umami is literally what kfc tastes like when you remove the chicken. i'm not knocking kfc for that ;-) msg is magical btw... add it to mushrooms with a litle fake truffle oil and its a game changer. love the video. thanks man. :-)

    One tip to make it even better is to add a little marmite to the bread and butter before you put it in the oven! That extra boost of salty umami brings the dish to a whole new level ^w^
    Edit: you can also use vegimite if you can’t get marmite in your area :)

    I always wanna say that rarebit is so good that it spawned animation. Tales of the rarebit fiend created by Windsor McKay is about a man getting so drunk off of eating so much of this that he has wild dreams in the first 2-D animations ever produced.

    Putting an egg into the cold sauce works really well

    And if you brown the butter and flour a little more,
    then add milk and pepper
    (black if you want to warn people or white if you want to surprise them :) )
    you have the base for Southern (U.S.) peppered/spicy milk/white/country gravy.
    Great on American biscuits (or any soft white country bread or dinner rolls) as is,
    or you can start adding things
    (drippings from cooked bacon or ham steaks (UK/IR/CN/US),
    browned breakfast sausage scrumbles,
    crumbled or finely diced cooked bacon/ham)
    Fun fact!
    Southern (U.S.) Red-Eye Gravy is made with the drippings of cooked ham steaks
    mixed black coffee to deglaze the pan,
    then simmered till dark and thick,
    (some add a little flour to make roux to make thicker)
    Serve on side with ham steaks and biscuits(U.S.) and pour over to desired heart attack level.

    Juuuust a wee bit lumpy there mate. Some vigorous whisking would have been in order, though I'm sure it was still delish! Some thin sliced Prosciutto deep fried/air fried and then finely crushed into coarse dust then sprinkled on top perhaps?

    I love peasant food. Think about it, Welsh Rarebit was end-of-the-month and rent-is-due food. Stale beer, stale bread, and stale cheese was mixed in order to keep the bairns from squalling.

    If you mix in cold to the roux you get no lumps. You get lumps when what liquid you’re adding is hot.

    Worcestershire = Here in the hills of East Tennessee we remember how to pronounce this word like this : Wash your sister sauce... lolololo😂

    Ok. This is where the bread got spicy and I used parsley because I had PINOLE.
