This is very close to the recipe I've been making for almost thirty years. The only difference is I tend to use a standard pilsner instead of Guiness, although I think I will try it with Guiness soon. I used to make this for friends and family and they would flip over it.
I made a Welsh rabbit with Caerphilly, brown bread, cider, and egg yolk to emulsify it all. It didn't look nearly as good as this, but my Lord it was delicious!

Modern day cookers do not come with a grill to toast bread, it’s also hard to find a grill online as your will find yourself in a sea of hit sandwich presses. Toast in a toaster is just not the same the bread has to be grilled under an open flame 🔥or coil.
Velveeta (2 slices or a lil chunk) and 1 TB Butter with a dash of milk. Melt it. 1/3 C. Milk with a T flour. Add it to melted cheese. 1t mustard with paprika for color. Ready with saltines or toast in 5 minutes. Mama made it for me. Pot roast, Irish stew or steak and bp dinner were other comfort foods that take all day. Cracker egg is also a classic comfort food.
What the @#$%.... Velveeta cheese? I don't even look at it for my mac & cheese... why go through all that work, instead of making a grill sandwich with processed cheese?
This isn’t rarebit. I like subbing stout and changing up the cheese, but all the Worcestershire is overkill. Rarebit is good cheese (I like white cheddar,) toss that with some flour and add some ale to make a dry paste. Put on toast. Broil.

Any dark stout or porter works really well - helps round out the cheese and spice
