    Hey! Thanks for popping by to chat about parsnips with me. They are SUCH an underrated vegetable, and you know I love cooking with those. Here are 3 lovely recipes with parsnips to help show them some love.
    Parsnip and Roasted Garlic Mash
    • 1 kg parsnips
    • 250 g russet potatoes (1 big or 2 small)
    • 2 heads roasted garlic
    • 1 teaspoon salt
    • 1/2 teaspoon nutmeg
    • Pepper (and potentially more salt) to taste
    Miso Maple Glazed Parsnips
    • 400 grams (3-ish med-large parsnips)
    • 1 tablespoon white miso paste
    • 3 tablespoons maple syrup
    *This maple miso glaze is awesome. You can also drizzle it over roasted parsnips (or roasted carrots, etc...)
    Parsnip Cake
    I thought this recipe originally came from BBC food but can't seem to find the exact one to give it credit. Here are the recipe amounts I use:
    • 220g butter
    • 315g granulated sugar
    • 125ml golden syrup
    • 4 eggs
    • 315g all-purpose flour
    • 2 Tbsp baking powder
    • 2 ½ tsp mixed spice (or a mix of spices)
    • 315g grated parsnips
    • 1 grated apple
    • Zest and juice of 1 orange
    Parsnip and Pear Soup
    • 2 cups leftover mash
    • 1 onion
    • 1 leek
    • 1 bosc pear
    • Chicken stock - until desired consistency

      Such a good combo! Oh, I just got another idea. Make the maple miso mixture, stir a little bit into some mayo, then make parsnip fries and dip them in the maple miso mayo. 😳

    I'm such a Salty, Savory person, never really was into parsnips, BUT! I LOVE your creativity with the cakes, very cool. I may try the parsnip potato mash, because that much more me... Girl, but that bicycle apron though! Chef's kiss ;-)

      Haha I’m the same! Give me all the salt! But I highly recommend the cake too :) I forgot to give a shout-out to my grandma for the apron!

    I bought some just last week. I like to put them in mashed potatoes. Not only that but them make great fries.

    Thank you so much for sharing your creativity. Was getting a bit fed up with just roasting the parsnips and wanted to see what's out there and found your video.
    I grow parsnips in my garden but they are all annoying sizes very uneven some too small to roast but the recipes you've show us just fit the bill!

    Ooh, I like the sound of that parsnip cake👍 I've always liked roasted parsnips, next time I'll add sesame seeds as you suggested. I'm with you about the thick baby soup puree, not a big fan either lol☺️

    Wow, Paula, Now that my 102 year old mother, who HATED parsnips, and forbade me to put them in her beef stew recipe from 1940, ("beef stew shouldn't taste sweet," she said.) has died, I'm going whole hog parsnips! ( I was her caregiver and cooked for her at home). Thank you for these ideas. Finally, I can eat what I like! Yeah, parsnips!

    New challenge for Paula, at the end of every video make a bonus soup out of the main dish/ingredient :P I love parsnips but I keep forgetting about them so thank you, the miso glazes ones look so bomb! And I had no idea you can make a cake with them, wow.

    Wow! All four look delicious! I 💚 parsnips! 😋🤤 I have had chocolate zucchini cake & beetroot cake,but never even heard of,let alone seen,or tasted parsnip cake! By the way,UK all spice is pretty much the same as pumpkin spice in North America.

    Thank you for posting this. Every January, I plan to celebrate Burns Night, and every January, I end up not bothering to do so. However, I’ve had neeps & tattles on the brain this week, so this video helped to fill that hole in my being.
    I should say that, as much as I enjoy parsnips, there is such a thing as too much of them. When Balthazar, Keith McNally’s seminal Soho restaurant, first opened, they had a duck & parsnip “shepherd’s” pie on the menu. As a lover of duck and a liker of parsnips, I was excited. However, the parsnips, rather than playing a supporting role to the bird, entirely dominated the dish. It’s no longer on the menu. Just a cautionary tale, I suppose.

      I can definitely imagine overdoing them! They have a very specific flavour. For example I don't really just add them in to any old soup - unless I want that soup to taste like parsnips :)
