How can you say the recipe is crystal clear when there is no mention of how much milk & maida to put.....beginners like me it's guess work if I try to cook it at all

Visited kerala 3 weeks back on family trip. When we say we are bengali, the people there cheer up as they know we have same likes and dislikes regarding food.
Pranav Premkumar: Absolutely correct! Being a Bengali I’ve always loved Avial, even in the States. I think the similarity also stems from the similar vegetables and ingredients that we grow and eat due to very similar “coastal heat” weather.
I'm not sure , do they add bitter gourd (uchhe/ korola) in Avial? The combination of vegetables in shukto are different from Avial , though look alikes.

This is my go to for Arizonian summers! Im lazy, so I use sunrise sukto mosla but OMG, your version looks delicious! Quick question: My thakuma's version has me marinating all vegetables in salt and turmeric. Im able to fry all vegetables till crispy because I use high heat but Im having trouble following the ratios. Have you every tried marinating the veggies?

Perfect recipe. Specifically that radhuni one. Otherwise I was going to comment on that. Btw posto (poppy seed) is missing only. Sorshe, posto, narkel, dudh, aadabata, radhuni, ghee, tejpata, 6 phoron(if radhuni is there then need to add black mustard seeds or vice versa) are the key ingredients of that divine taste of our shukto!!!
Haha, phew. Thank god for radhuni :-) We don't use posto for this particular shukto in our home. We use it in lau'er shukto though, which has a shorshe phoron.

Hi dearest team, I replicated the recipe and asked my grannies to taste. I then showed them the video also. They said what's lacking is the shukto moshla... and advised me to dry roast kalo shorshe and paanch phoron (along with little radhuni if wished) and grind them to a fine powder. To retain the main bitter aroma of the dish, use this in hot ghee and add to the shukto as tadka lastly just before adding the radhuni powder as u all had done. Is this a valuable addition? And before ending, both of u have received lots of good wishes and blessings from my 4 grannies (my own grandma hails from dhaka so she was really highly impressed that people of the current generations are giving such "inaccessible" bengali dishes a try!) P. S. - note the avoidance of the word "authentic" as u guys like it :-D
Yes I too add ground panch phoron at the end.and I don't cook the veggies in sorshe as it would turn bitter.i add sorshe when the veggies are 3/4 cooked.

I know. 😃) Grown mostly in South Asia, Southeast Asia and Indonesia, it is often confused with ajwain. A small tip: if ginger needs to be put directly on hot oil,add a pinch of halud in the ginger paste, it won't splatter that much
