    Huevos Rancheros
    2 white onions
    4 Roma tomatoes, cored
    2 jalapenos
    2 serrano peppers
    6 garlic cloves (divided)
    2 guajillo chiies finely chopped
    Bacon grease or fry oil
    Corn tortillas
    Eggs
    Shredded cheese, for sprinkling
    Slice the onion in half, but be sure to keep the root ends intact.
    Begin by preparing the vegetables: Core the tomatoes, slice the stems off the jalapeno and serrano peppers and remove the seeds, if desired to reduce the spiciness. Slice the onions in half, but keep the root intact.
    Fill a large saucepan about halfway with water. Add all the vegetables and 4 of the garlic cloves. Bring to a boil for about 10 minutes or until the tomatoes are tender, adding more water if needed.
    Remove the vegetables with a slotted spoon and let cool. Peel the outer skin of the tomatoes off and discard (soaking them in cold water beforehand, will release the skin easier). Cut the stems off the jalapeno and serrano peppers, and remove the seeds, if desired. Remove the root of the onions.
    Add all the vegetables, along with the remaining 2 garlic cloves to a blender, and diced guajillo peppers and Salt and pepper, to taste. Blend until smooth.
    Pour the contents in a saucepan to a boil. Reduce the heat to a simmer, cover and continue to cook for 10 minutes, stirring occasionally.
    Meanwhile, heat about 1 tablespoon of bacon grease or oil in a cast iron skillet. Add the tortillas and flip to coat with grease on both sides. Cook until they bubble up slightly and warm through on both sides. Be sure not to overcook until crispy.
    Return to the skillet, adding more grease if needed, and add the egg(s). Fry until over-easy.
    Take the tortillas and top with the egg followed by some sprinkled cheese and then the sauce. Top with more cheese. Serve immediately.

      @@CowboyKentRollins My favorite Sunday morning breakfsst to make for the family. The other favorite for kids is 2 big ole cat head biscuits smothered in homemade sausage gravy with ham steaks and eggs. Wish we were closer so we could swap recipes over camp or on a long drive.

      It's a cultural thing around there to say Spanish because sometimes people get offended if you say Mexican. I don't think he's insulting anyone, but rather appreciating and sharing the culture through food and ranching. I take it you're from California, so you really don't know.

    Little known fact, Italian tomato sauce was inspired by this red sauce you make in all your videos. When the Spaniards arrived in Mexico, they saw the natives making tomato sauce with herbs and peppers. They tried it and liked it so much that they brought it back to Spain, along with some tomatoes (new world fruit). And before you know it, it spread to Italy and became what we now know as pasta and marinara sauce.

    As a mexican (living in Mexico not the US) i can only say that every mexican that sees this video will be skeptical until the part that you made the salsa, THATS how you win a mexican and the cherry on the top is that you made a real recepy, old school recepy, simple and delicious. The cheese not so much but thats your touch and i can respect that.
    You should trie to make (or learn to make) red rice with corn and peas and then put a bed of red riceand the huevos on top with the salsa you made. Thaaaaaaats another recepy

    Sir, im from Mexico but I lived in TX for about 3 years, every time i went to a "mexican" restaurant I would order huevos rancheros and they never made em right, but you, you sir just cooked some traditional huevos rancheros.

    I don't know why UA-cam suggested me this stuff, but damn I loved your video. My mom had a long relationship with this fine old man, God has him in his glory. He lived for many years in Colorado and learned how to cook Huevos Rancheros. One day he came to my house and said "Today I'm gonna cook you guys some Huevos Rancheros". I have fond memories of that gentleman, he was a true father for me and this video reminded me of him. Thanks a lot, Mr. Cowboy!

    Hi sir. I am from Mexico and I can confirm the recipe. I've been eating huevos rancheros since I was a little boy, and I can tell you that you have a delicious combination of ingredients. Huevos rancheros are often served with beans covered with cheese (fresh or dried), some bacon and a cup of coffee. You got plus one subscriber. Regards.

    I was initially skeptical that you wouldn't do this recipe justice because you are not Mexican, but not even halfway thru, your earnestness and sincerity told me you'd be respectful or die trying, and you nailed the recipe. In fact, that salsa is way better than mine, so thank you for sharing that killer salsa :)

      Not racist at all.
      An example, it's Extremely difficult to get authentic Japanese food out side of Japan. If I see the chef is from Japan there is a much better chance they won't have changed the flavour profiles of the food to fit the western palate (as much) plus that they are more likely to use traditional Japanese techniques.
      USA is full of americanised Mexican food. Vast majority of the time you find Mexican in the states it won't be proper Mexican. Hence the hesitance in an American cooking there food.

    As a real Mexican, I would try roasting the onion, tomatoes, peppers, and garlic on open coals or on a pan. When they are nice and roasted let them rest in a container. Mash them with salt and let me tell you, you got the perfect salsa for Huevos Rancheros.

    You just made an old man laugh out loud with the ending of this video. It is so nice to see Shannon on camera (even if she didn't take a shower) and as always love the little dance at the end.     I’ve been watching your videos and cooking aside, you inspire me to move to the Texas Hill Country side of Texas. My wife and I have been discussing moving out of Los Angeles for 2 years now for a better life for our children. I graduate this year and hope to find a job near Cedar Park/Round Rock Texas. Thats all we are waiting for. My kids would love a huge property like yours, and I’ve been wanting to buy me a horse too lol.
