I've heard of some chefs preferring instant potatoes because they absolutely know how much water is in their dough.
Instant mashed potatoes are one of the few preserved foods that taste right. Even nice restaurants will use them. Not all, but it's not unheard of.
I used instant mashed potatoes to make gnocchi because I was too lazy to use actual potatoes. They turned out really great ngl.

Mashed potatoes are great but just by itself can taste bland and boring. Chefs put vegetables, nuts, anything to add a little crunch to make the texture of the food more interesting.
