    He said "Laissez le(s) bon temps rouler" which means "Let the good times roll" in French. OMG that looks good, and it looks just like a king cake too! excellent

    Boudin is a French sausage. Louisiana boudin is typically made with rice. Many people make their own boudin.

    The part you did not understand at the beginning was Cajun French for "Let the good times roll".

    I lived in the New Orleans area (Slidell, Louisiana) for several years in the 90's and I love Boudin sausage, crawfish and King Cake (and all things Louisiana/Cajun food goodness, Gumbo, Jambalaya, Shrimp Po' Boys, Crawfish boil etc.) but I've never seen anything like this and it looks delicious. I was drooling Jono!

    I lived on the Mississippi Coast for 13 years. We were right between Mobile, AL, and New Orleans, LA. Mardis Gras is HUGE there. I've had many King Cakes during those years, but they were the sweet kind. I've never had a savory King Cake, but I have had Boudin Balls and been to several crawfish boils, and they are both incredible, so I can only imagine how good the combination of the two would be in a King Cake.

    Jono, the instant crescent rolls he is using, is a shortcut (not available outside North America). You can use your own pastry dough or puff pastry if that's what you have. I make my own pastry dough.

    I didn't grow up with this, please educate me and let me know if I'm wrong. From what I understand, King cake is a ring shaped loaf of bread, usually raisin bread. It's associated with the Catholic culture. And it's cut in twelve to serve, with *something* hidden in or under one of the lucky pieces.

      Never seen a king cake with raisins. Traditionally the baby is hidden in the cake and whoever gets the baby in their slice has to bring the next king cake.

    Bon! You are right, the Holy Trinity contains onion, bell peppers and the last ingredient is celery. You have learned a lot!!

    Boudin sausage is very unique to Louisiana, and perhaps southeastern Texas, I live in Louisiana, and have never had anything even close to it anywhere else I have traveled. It was first created during world war 2 when food rationing was going on, as a way to extend the amount meat available for making sausages, and therefore contains a high percentage of rice, mixed with mostly pork shoulder meat, but also liver, there are even seafood versions which may use shrimp and crabs, or even crawfish along with green onion and various seasoning.

    He lost me with the cold spread thing that he heated up. Also he needed to brush the dough with melted butter to get a more golden brown color. Or egg yolk.

    Just remember when you're smoking....DO NOT PUT WOOD OR CHARCOAL UNDER THE MEAT....the wood only goes in the smoker box. No direct heat.

    No puff pastry and Cresent roll dough are different.
    The one thing that makes his savory king cake lacking is the Jesus toy that's out in the cake.
    The holy trinity of cajun cooking is
    Onions Celery & bell peppers

    Mardi Gras was created and founded here in Mobile , Alabama , not in New Orleans, Louisiana but Hollyweird constantly likes to pretend that it originated in New Orleans but it wasn't. We don't mind sharing it with our good friends in New Orleans , and my grandfather lives in Slidell , Louisiana , but give credit where credit is due. Respect the original. 😁
