Its impossible to both read every card (front and back) as well as commentate from a theory point of view. They have some of the cards appear on the side when they can, but there just isnt time to show them all. When pros play magic they can play their entire turn in a handful of seconds
They didn't make the video especially for you. The commentors cannot explain every single card while offering actually insightful commentary. The games are far too fast for that.

They could've quickly showed each card when it's played, so that if needed, people can pause the video to read the card or google its title. Meurth that wasn't arrogant, it was a simple explanation for why they cant cover every card. Most of the cards they played are pretty well known anyway, and wizards event coverage is designed for people who are semi competetive, or have an understanding of the standard format. This just happens to be an old video.
