A Lemon Meringue Pie Cocktail? Dessert cocktail! | Bar Talk & Cocktails

- You know, there are a lot of "Pie" cocktails out there. Bizarre. But, the funny thing is, almost all of the "Pie" cocktails i've come across in my years of bartending, taste pretty darn good! The Lemon Meringue Pie cocktail is no different. This is an excellent lemony, meringuey, sweet dessert libation. There are many different versions of this cocktail, so i'm going to show you the way I've always made it. If you love Lemon Meringue Pie, you are going to love this one! Cheers!

THE LEMON MERINGUE PIE COCKTAIL
--------------------
MERINGUE FOAM -
TO A CREAM WHIPPER ADD:
4 TBSP / 2 - EGG WHITES
1/2 oz (15ml) - LEMON JUICE
1/2 oz (15ml) - SIMPLE SYRUP
1 oz (30ml) - ADVOCAAT
GIVE IT A SHAKE AND CHARGE WITH TWO N2O CHARGERS.
CHILL IN THE REFRIGERATOR FOR 1 HOUR BEFORE USING.

IN A MIXING GLASS FILLED WITH ICE COMBINE:
1oz (30ml) - CITRON VODKA
1/2oz (15ml) - LIMONCELLO
1/2oz (15ml) - COINTREAU
1/2oz (15ml) - GALLIANO VANILLA
STIR UNTIL WELL CHILLED.
FILL HALF OF A MARTINI GLASS OR COUPE WITH THE MERINGUE FOAM.
STRAIN THE COCKTAIL FROM THE MIXING GLASS OVER TOP.
GARNISH WITH FINE-GRATED LEMON RIND AND A STAR ANISE.

If you notice the foam dissipating too fast, you can try adding some gelatin to help keep it together and give it some firmness. Id be curious whether you could use regular vodka and add some lemon juice to balance the liqueurs.
Sounds great. If I could scrape up about $250 for liquor and cream canister and gas canisters, I'll be set.

Hi Bruce. I have not seen your videos for a while. It is good to see that you still in good health. Although I do not drink alcohol, because I am a muslim, I still enjoy watching your videos.
By the way, do you ever heard about cocktail that use durian fruit as part of the ingredient? I do not know if you like durians like us in Indonesia, but maybe one day you can make one.
