- A Tale of Two Rabbits.
While in Covid lock down I decided to celebrate Maltese Independence day by making its national dish twice in a weekend. I made my mother's recipe (AKA the oracle) and compared it to an Instagram cooking class the night before. Found a few differences between the two "traditional" recipes.

My Nunna inlaw and mother inlaw always use pork belly with the fenech. (And when rabbit isn't avail and kids a hanging for "stewed fart lol" lol they use chicken instead if rabbit.
Love the pork belly. Just adds to it!
