Instalment four of my Classic Maltese Recipes from the 1950's.
Not a recipe for those who only eat with their eyes. In fact, may be a contender for least visually appealing soup on the planet. But I love it and hope you have the courage to give it a try because you will too.

A Tale of Two Rabbits. While in Covid lock down I decided to celebrate Maltese Independence day by making its national dish twice in a weekend. I made my mother's recipe (AKA the oracle) and compared it to an Instagram cooking class the night before. Found a few differences between the two "traditional" recipes.

Second installment. Another Maltese recipe straight out of the 1950's. A thick and hearty split pea, bean and smoked pork rib soup. Really just making these videos to record my 86 year old mother's (AKA the Oracle) recipes for the extended family.

I am glad you enjoyed the recipe Rachael. Since doing the video I have learned that it is more of a pea and ham soup than a strict vegetable “minestra” but that’s what my mother always called it. If you make it tell me how it turns out.

My Nunna inlaw and mother inlaw always use pork belly with the fenech. (And when rabbit isn't avail and kids a hanging for "stewed fart lol" lol they use chicken instead if rabbit.
Love the pork belly. Just adds to it!
