I have always prefered walk-and-talk, or just continuous videoing of hikes as opposed to heavily edited or chopped up
(where they cut to a new scene every ten or twenty seconds) videos of hikes and bikes.
Keep doing it this way. No need for fancy cameras or microphones. Your volume level and voice clarity is just fine for this type of video.
