i feel like you'd lose the nice texture of all the paints and paper by just covering it in plastic gloss, yknow??? I think putting stuff behind glass is probably better

Instead of thinking which paint is better for beginners you should just choose a paint that you like and learn to use that. Each paint is very different so the skills that you learn with one don’t necessarily transfer to a different paint. That’s why there aren’t beginner paints and more advanced paints. If you want to do the sort of stuff that she is doing in this video gouache, acryla gouache or acrylic paint would be good choices.
I started with a cheap watercolour set like £3 very dusty but learner quit a bit and you can get different inconsistencies based on the amount of water. So you can have translucent paint and quite bold colour at the same time plus a nice blending and you can still incorporate texture.
I love that when you set the brushes down they’re magically clean
