How Turkish Style Kunafa is made, Kunefe

  • Kunafa (in Turkish: künefe) is the closest rival of the famous Turkish baklava. I'm sure most of you have tasted this incredibly delicious dessert once, if not you have missed a lot!
    Buttered and crispy kadayif pastry layered with oozy cheese and sweetened with syrup. Served warm for a melting and stringy cheese. It is said to be a recipe created to satisfy the hunger of the sultans during the Ramadan.
    It is also known as kanafa, kanafeh or knafe in different countries, today I'm making the Turkish version of it: Künefe

    Ingredients (for 1 person / portion) :
    • 150 g kadayif for kunafa (shredded kataifi pastry)
    • 150 g unsalted cheese for kunafa (you can also use unsalted and dry mozzarella)
    • 60 g butter (about 4 tbsp) - room temperature
    • 1 tsp grape molasses
    • ½ cup caster sugar
    • ½ cup water
    • Slice of lemon
    • 1 tbsp crushed pistachio to garnish

    I have never heard of Kunafa before, but as soon as I read that it was a desert then I became interested :) Now that is what I like to see, a bit of innovation, using a pair of pliers to rotate the dish 😁 That's my way of cooking!! That's an awful lot of work that goes in to making a Kunafa, isn't it? The cooking process has to be supervised throughout. It almost looked like you were going to need a pair of scissors to cut the cheese at the end 😀

    In Iran we have these black metal circles with tiny holes that you put over the flame to evenly distribute the heat. It would help here.

    Turkish Kunefe looks yummy... we buy Kunafa from a nearby Mediterranean sweet shop, we just love it, but it looks different..

      There different types depending on the countries, yours might be Lebanese or Egyptian style maybe :)

      It is indeed optional, but often used in Turkey for kunefe to give it a nice caralemized color and flavor on the outside.

    Arabic dessert since the era of the Umayyads .. And it was called at that time "Kunafah Muawiya" named after Caliph Muawiyah ..it is not Turkish.
