I'm not a canoeist, but I believe the bags are already inflated and kept within the canoe. They help keep the canoe from sinking if it capsizes etc. If they're attached with straps or carabiners then it shouldn't take long to arrange. you might be able to use dry bags as well. [EDIT]Actually I think they are both dry bags in the video.

Yes my feet are braced and the canoe is pulled up via the painter from the yoke
