    The way I was taught to make a heart is you use a square pan for one and a round for the other. Cut the round in half and it fits right to the square. This makes a single layer cake and it's larger than the heart you made.

      I was going to say the same thing. My mom made it first when I was a kid. I'm 64 now. We used a bix mix. Cherry chip for its pink color.

      This is what I was going to say! You need to use the same size in inches, like a 9 inch square and a 9 inch round pan, so they fit perfectly, but this is MUCH easier than carving up a circle to make a heart!

    Emmy! For you and anyone who's worried about the red food coloring amounts in this cake, did you know that you can make a 'natural' food coloring-less red velvet? And without even using vegetable-based food colorings like beets or dragonfruit powder, for example! The key is using cocoa powder that is listed as 'natural' cocoa powder. Much like red cabbage, natural untreated cocoa is a pH indicator, and when exposed to acidic ingredients like buttermilk or vinegar, turns natural cocoa a reddish-brown color that is indicative of old-fashioned red velvet cakes. If you google no-dye red velvet cake recipes, you're sure to find a bunch! It would be cool if you would give it a try and compare it to how this one tastes, if you think that the food coloring gives it that real red velvet flavor! Admittedly, the color is a bit more toned down than the bright heart red you made, but it's pretty enough on its own 😁

      Yes, I use beets, gives a lovely colour and the beets make the cake so moist BUT I have also heard of replacing some of the flour with red rice flour, also gives a deep red colour and a soft crumb

      Yes, this style (natural cocoa with an acidic reaction like buttermilk) is the OG red velvet recipe! When people were dissatisfied with the natural deep red reaction, they started experimenting to make it brighter and that was not the point of the recipe. It was first the flavor and secondly the reaction creating the color of the cake.

      @@MyFocusVaries You can't use Dutch cocoa, it has to be natural. Even then, it's subtle, not like when you use food dye. I don't see the point of it, personally, why not just have a nice chocolate cake? 🫤

      ​@@emmymade sounds silly but it actually helps to add your powdered sugar to the Bowl first and then your cream cheese to help prevent powdered sugar from flying all over the place

      There are ways to make red velvet with a specific style of higher alkalinity (I think) cocoa that reacts with the lavender (usually cream of tartar or baking powder).

    Ok, I have to admit that an entire bottle of red food coloring sounds a little scary (although it's probably not gonna kill you in moderation--unless you've got an allergy, of course.) Glad it turned out well. It looks delicious...and was described deliciously by Emmy, as always.
    As a side note, I've heard that dried strawberries or beets, powdered in a food processor, can be a good alternative for red food coloring. I wonder how such a substitution would affect the taste (and perhaps texture?) of this cake if one were to try it. Perhaps an episode comparing various food dye substitutes in pastries would be fun.

      Strawberry powder is very strongly strawberry flavored. I only recommend using it if you want a strawberry flavored sweet. Beet powder you can use less so it shouldn’t add much flavor but I doubt it would be bold enough or red enough since it’s more fuchsia in color to make a red velvet

      I have food coloring by Wilton, I believe. It is all natural without any food dyes. I am really allergic to red dye #40 and want to continue making my red velvet baked donuts. Yummy!
      I did a search on the internet and ended up buying the set of eight (maybe?... too lazy to go look LOL) at Target.

      @@linda.christie I couldn't find exactly the ones you describe--looked on Wilton's website and the one I was looking at had Red #40 on the label. Perhaps a different brand?
      In the meantime...red velvet baked donuts sound *amazing*. Probably too dangerous to have in my kitchen, as I'd eat them all.

    The red velvet cakes I make have vinegar in them. I was always told that is the difference between a chocolate cake and red velvet is the reaction the vinegar has to the chocolate

      That's the truth. Originally the reddish color came from a chemical reaction with the vinegar but people added food dye over time to exaggerate the hue as she said at the start.

      @@peacefuldaizy5717 There are a lot of variations if you look up historical red velvet cake or vintage red velvet cake recipe, that sort of thing. Here on UA-cam, Allrecipes of all places actually has a pretty decent video! She doesn't include vinegar, but according to another historical recipe I found, you would mix it and baking soda and add the combo right before beating the batter. I'm not a baker so I don't really know how much is necessary if you want to try the vinegar route, but that should get you started and seems to yield really great results! Also worth noting, apparently you can also just increase the amount of unalkalized cacao powder and that will cause the same chemical reaction as having vinegar!

    Red Velvet is more unique than most people give it credit for. The presence of vinegar actually works to break down the proteins in the flour, which is what gives it such a standout delicate texture. The vinegar also reacts with the cocoa powder, in that it changes its color, which is what traditionally alters the standard brown chocolate cake into something slightly more reddish.

    Red velvet cake is a delightful light chocolate flavor that isn't quite as rich as a dark chocolate cake. Plus the cream cheese frosting, holy crap. I envy you getting to taste it for the first time and having such a good example of red velvet cake to try.

    This was so great. Just yesterday I wanted the NY Times Cooking channel, where the woman made a wonderful chocolate cake, but the technqiue was pretty intimidating.     We have a family recipe that my great-great grandmother got from a restaurant, and has passed down now to me via my great grandmother. It uses two whole bottles of red food coloring! It uses the traditional Ermine frosting rather than cream cheese which was how they were served initially!

    Original red velvet cake frosting is a much less sweet cooked frosting with flour and shortening. Would love to see you try that for comparison. It's a favorite in our house and my brother requests it for his birthday every year.

      My grandma's red velvet cake also had a cooked frosting, although hers was with cornstarch and water, and she very specifically required Blue Bonnet margarine. That's what I grew up with, I didn't have red velvet with cream cheese frosting until I was in college.

    I buy a red velvet cake mix then add fresh beets to the cake mix, gives it the REAL RED taste...so good..I steam cook the beets first til soft then mix to the cake mix with all the other ingredients in the cake mix..SO GOOD

    I always made a heart cake for my family on Valentine's Day. I used a square brownie pan and a circle pan. Take the square and put it with one point on top and bottom like a diamond. Then cut circle in half and make the cheeks of heart one on each side of the top sides. Frost and you have a heart. I have never tried it with just a circle pan. I think I have to try that.     I prefer an ermine frosting to cream cheese. My birthday is the day after Valentine’s Day, so I sometimes make red velvet cake for the occasion. Your cake is beautiful!

    Red velvet cake is my absolute favorite cake. However, many years ago, a friend had an extended hospital stay and, to celebrate his homecoming, his mother (a fabulous professional baker) made him a two layer 16 inch red velvet cake. Since I was living with them at the time, we had this cake every day for a LONG time. It was quite a while before I had it again. Lol

    I’m sure this is in the comments somewhere, but as a Pastrychef I’ve always used beetroot as the colour additive. It’s natural, healthy and doesn’t change the flavour profile too much if you just use beet juice.

    Funny my cousin just made a red velvet cake for me for my birthday today. She made it with red wine. The red wine did make it have a slightly red tint. It was good without all the food coloring.

    Being from down here in South Carolina, I'm shocked you have NEVER made or tasted red velvet cake!!! We have always made them. And the key is BUTTERMILK!!!!!. That and cream cheese frosting. It's the main flavor cake I always requested my mom make for my birthday growing up!

    The traditional frosting for a red velvet cake ermine frosting. I assume people mistakenly thought cream cheese frosting was on it, that’s a change from tradition though.

    The best frosting I’ve ever tasted is with flavoured icing sugar (powdered sugar) it comes in every flavour imaginable. One of my favourites is the White Chocolate, you make it exactly as you would usually, and it’s divine. They do Cheesecake, white chocolate, white chocolate and ginger, cherry, cherry almond, Black Forest and raspberry. They do so many more flavours than I’ve listed and the prices are similar to what you’d pay for basic icing sugar. I’m making lemon frosting at the moment which is new.

    I lurve red velvet cake, but I never knew it had coffee in it. First had it at a bakery in Cheltenham, UK, called Swallow, and there's a lovely bakery here in Kigali called Slices at Kigali Heights. They do the full red velvet cake but also cupcakes. Very yummy.

    I'm sure someone has said this in comments by now, but traditional, historical, red velvet cakes were made with vinegar and cocoa powder that HAS NOT been alkalized. (Also brown sugar instead of white.) There's a chemical reaction between the vinegar and cocoa that creates a red tint. I would LOVE to see you try the historical method for it!!

    This looks delightful!! Good job, especially it being your first time. I personally like my red velvet cakes to be even lighter in color like a bright red. Not that would taste any different just my personal liking on the esthetic.

    My mom would always make red velvet for my brother's birthday as it was his favorite. I've tried many red velvet cakes over the years and I will say it seems to me, everyone's taste and texture are little different. I do favore my mom's, lol!

    It's funny that you said the thing about "what would it be with out the red" because velvet cakes are a whole subset of cakes and incidentally my favorite kind of cake. They are traditionally made with baking soda and activated with buttermilk, although you could use other kinds of sour things but buttermilk is better. They come out very moist and particularly flavorful because the buttermilk adds a very interesting flavor and the extra butterfat from the buttermilk makes a rich cake. Traditionally, they are iced with ermine frosting which is why red velvet cakes were originally iced with ermine frosting as well. The "red" velvet cake came about, as you said, because adding natural cocoa powder to a velvet cake turns the anthocyanin red (because it is pH reactive) when you add the acidic buttermilk to the cake. However, sadly, the red color is really only there in the batter. After you bake it, the red color goes away and the cake turns a light brown color, similar to the way cocoa beans are reddish when they're raw and turn brown after fermentation and roasting. So, if you're interested in exploring old cake recipes, I recommend exploring velvet cakes! They are very delicious cakes!
    A little note about ermine frosting: I love this frosting because it has a texture like whipped cream but is a lot more stable. It's not very sweet and it is very easy to flavor it any way you like. If you like a frosted cake but don't really love butter cream because it's too sweet, try ermine! It's a great alternative!

    My s/o absolutely loves red velvet cake but we don't appreciate the red dye. So we use beet powder in its place and a touch extra oil to compensate. It is delicious

    I love that this recipe includes the vinegar. Many nowadays do not. To me, it’s not Red Velvet if it doesn’t have vinegar.

    Thank you for this video, is always less scary to try new recipes when you see someone trying them and not just telling you how to do it, at least for me!! I had a question, is it necessary for the flour to be all purpose? I have a lot of self rising flour and if it's neccesary I'll buy some all purpose but just wanted to know if I can replace it. If Emmy doesn't see this I appreciate any answers/opinions. Keep up with your cooking Emmy, you're amazing!!
