    Slave history ha a lot to do with Bajan and Caribbean cuisine. We had to survive on what we had or from the little we had combined with trying other ingredients we found locally resourced, methods passed down through history etc. A simple dish of cornmeal, saltfish, okras, offal pig trotters, pig ears. Caribbean cooks are highly enterprising, and willing akways to try out new ideas. Delicious food is the result. Love all the fish dishes from the Caribbean which are a fusion of all Nations.
