    MUTTON BELIRAM
    Preparation time : 15 minutes
    Cooking time : 35-40 minutes
    Servings : 4
    Ingredients
    For Marinating Mutton
    1 kg Mutton - curry cut (मटन)
    2 medium Onion - sliced (प्याज़)
    1 tbsp Ginger-Garlic-Green Chilli Paste (अदरक लहसुन हरी मिर्च का पेस्ट)
    1 fresh Green Chilli - slit in half (हरी मिर्च)
    1 Bay Leaf (तेज पत्ता)
    6-8 Black Peppercorns (काली मिर्च के दाने)
    2 Cloves (लॉन्ग)
    1 Black Cardamom (बड़ी इलायची)
    1½ -2 cups Curd (दही)
    2 tsp Coriander Powder (धनिया पाउडर)
    ½ tsp Turmeric Powder (हल्दी पाउडर)
    1 tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)
    Salt to taste (नमक स्वादानुसार)
    For Gravy
    2 tbsp Ghee (घी)
    1 tsp Cumin Seeds (जीरा)
    1 inch Ginger - julienned (अदरक)
    1 fresh Green Chilli - roughly chopped (हरी मिर्च)
    2 medium Onion - chopped (प्याज़)
    Marinated Mutton (मैरिनेटेड मटन)
    Salt to taste (नमक स्वादानुसार)
    2 tbsp Coriander Seeds - crushed (धनिया के बीज)
    Water / Mutton stock (पानी या मटन स्टॉक)
    2 tbsp Coriander Leaves - chopped (धनिया पत्ता)
    For Garnish
    Ginger - julienned (लंबा कटा अदरक)
    fresh Coriander Leaves (ताजा धनिया पत्ता)
    Process
    For Marinating Mutton
    In a bowl add mutton, onion, ginger-garlic-green chilli paste, green chilli, bay leaf, black pepper cons, cloves, black cardamom, curd, coriander powder, turmeric powder, degi red chilli powder, salt and mix everything properly then keep aside for at least 1 hour or over night in the fridge.
    For Gravy
    In a kadai heat ghee and add cumin seeds, ginger, green chilli, onion and saute it properly until golden brown.
    Now add the marinated mutton saute it properly until the mixture starts to thickens and the oil starts separating.
    Then add salt, crushed coriander seeds and saute for a minute then add water/mutton stock and cover it with a lid and cook until the mutton is completely cooked (stir it in between).
    Remove the lid then add chopped fresh coriander leaves and stir it once.
    Switch off the flames and serve hot in a serving plate then garnish with ginger julienne and coriander leaves.

    .The best part of Ranveer's recipe is that he uses simple spices that are available in common household kitchen. This one is simple dish and is quite yummy. No garam masala was used but still the taste was quite rich.

    Just wanted to share Chef, my grandfather used to cook mutton in our household, only he was assigned to do so, he used to bhuno for atleast 2-3 hrs 😇it was like a festival in our house whenever he made his famous mutton sabji 😍 it’s so strange how food brings back childhood memories ❤️ thanks for this amazing recipe 👍 @ChefRanveerBrar

    SubhanAllah! I made the recipe and as a Hyderabadi who is so use to cooking with sukha masal: peanuts, coconut, til and poppy seeds dry roasted ans ground it was so easy and even weirdly easy to make this recipe with no dry roasting and grinding.
    Lip smacking good. I followed all the directions to a T. The dhania seemed like a lot but I went for it. It was not overpowering at all.
    Being very use aalu gosht ka khorma ( stable in Hyderabadi homes ) I had to add potatoes! Boiled some baby Yukon Gold, made them “kripsey” by frying them in oil with little Lal mirch and salt and one bro mirch and when all nice done, added to the salan.
    Also it was my first time cooking with ghee it I use it only for Biryani or sheer Khorma. O M G!!! A little went along way and the tael chutna was so perfect 👌🏻 just like my dadijaans cooking use to be. The rest of a beautiful salan is when the ghee/ tel floats in the top! Lazeez!

    We use to make this recipe only include dhagra dhania and zeera- both in the end.

    bhai, I never said this before but I have observed this.. aap with these delicious dishes are reminding how Hindustan and Pakistan were not 2 different countries, very politely and I love it :) .. And I am of the same opinion that these 2 countries were never 2 separate countries... it is just thank you or *** angrez jinhone desh ko batwa diya jo ghaaw abhi bhi nahi bhar raha... mere dadaji ne bola tha ittar aur paan (I know aapko samjha hoga ye) were (rather still are?) best buddies... barabar hain ki nahi? :)

    Also a reason why not to put chilled mutton is ... When we will put chilled mutton in the pan it will cool the hot pan ,the mutton will absorb the heat but other elements will take time ... Thus , Mr beliram will get angry .... Thank you chef Ranveer ... Apne itna toh samjha hi diya hai ....❤️

    I tried this recipe and cooked it without using pressure cooker, trust me/trust Ranveer😅 it’s a must try dish. Mutton was melting in mouth and too good in taste. Everyone loved it.

    The story I've heard about this dish, is that Beliram was a Chef at The Calridges Hotel in New Delhi and the dish is named after him
