Hey Alyssia These smoothies look gorgeous. I think I will try the prOATein one and the sweet potato carrot pie or Blueberry coconut (I am scared of the beets! LOL!) this weekend. I am helping a friend move and these would be great to grab and go.
I'd start with 1/4 tsp and adjust to your taste preference, vanilla extract is very strong to me so I tend to use less than other people :) But yes you can definitely replace the bean if you can't get ahold of it!
My husband is going to love these! I'm not a huge smoothie person, I prefer to eat my calories, but he's a Marine and works 13 hour shifts. I'd feel good sending him off with one of these and a packed lunch!

I tried the smoothies! I think my fave was the strawberry! my blender is really old so it had a hard time blending the carrot smoothie. the beet also was a bit chunky. I think you should try for yourself to see what works for you!

I love this. I have delivery deadlines to make during lunch at work so I usually drink soup while working so I don't miss lunch. But in the summer it's too hot for the soups I like. I will definitely try these out!
Ok so far I tried the vanilla with the protein powder and is pretty good. It doesn’t taste too sweet but you feel full so great meal replacement. I also tried the blueberry, beans, beets and that was not tasty at all. I couldn’t drink it, not the best combination. I will be trying the carrot and roasted sweet potatoes, and I am hoping this one will be better. Overall great recommendations!
Love your screenshot option! Absolute win! The only thing I can point at is that I find the choice of the 'snap' sound SLIGHTLY annoying. It's of course bearbale, but it sounds old and grainy so my suggestion would be to find a 'lighter and more modern' sound! Again, I love the screenshot idea. It's so simple and easy

Hi Alyssia, I'm so glad I found your channel. You have so many great ideas on how to make veggies easier to eat. I have ARFID and my problem is mostly with texture. I'm also gluten intolerant. I'd love more recipes where I can incorporate more disguised veggies in my diet. For winter it was easy as I'd blend them all into soups and season them well but now that summer is coming, it's more difficult as it will be too hot to eat soup. Any tips and recipes would be greatly appreciated

Mind Over Munch can you do some nut free recipes and will cows milk work instead of nut milk...
regular milk would probably work, you could also go for soy products if you're not allergic to that too!
Mind Over Munch I recently learned u can put the bottom of blenders on the tops of Marion jars. maybe whip them up like that and save a dish or two.

Would I be able to sub pure vanilla extract for the vanilla bean? Where I live vanilla beans are VERY expensive. How much would I have to use?

You could use vanilla bean paste. It is a middle ground between extract and whole beans in terms of price.

You could replace tofu with another creamy protein element, like white beans!
Hi Alyssia, I'm so glad I found your channel. You have so many great ideas on how to make veggies easier to eat. I have ARFID and my problem is mostly with texture. I'm also gluten intolerant. I'd love more recipes where I can incorporate more disguised veggies in my diet. For winter it was easy as I'd blend them all into soups and season them well but now that summer is coming, it's more difficult as it will be too hot to eat soup. Any tips and recipes would be greatly appreciated
