  • JJAJANGMYEON (Korean Black Bean Noodles)
    Good for 4 servings
    - noodles (‘kalguksoo noodles’)
    - 6 tbsp fried CHUNJANG (Black bean paste)
    - 1/4 cooking oil
    - 1 cup pork
    - 1/4 tablespoon ginger
    - 1/2 cup sugar (2 tablespoons per serving)
    - 4 tablespoon soy sauce
    - 4 tablespoon oyster sauce
    - 1/2 cup water
    - 2~3 tablespoon cornstarch
    - 2 pcs leeks
    - 2 pcs onions
    - 1/2 cabbage
    - cucumber/peas (for topping)

    Hi, chef! I just made your Jjajangmyeon today. It was my first time to cook a Korean dish. I think it is successful naman. ☺️ But, I just realized that Jjajangmyeon isn’t my kind of taste. It is delicious naman, just not my type.
    I’m gonna try your Kimchi recipe next time. Since I love Kimchi. 🤗

    We only use yellow or white onions only not the red one never use red onions
    Also some Koreans the traditional way we don’t put sugar on it we achieve it from onions
    Specially if the onions is freshly pick few mins ago only
    Also for those Muslim and other condition you can use beef or chicken also but the most commonly use is pork
    You can add also potato
    If you don’t like noodles you can tap it on rice we called it jajjangbap
    You can mix it up with seafood too we called it jaengban jajjangmyeon

    You can use and it’s best to use fresh udon for jajjangmyeon or egg noodles
    But if not go for frozen jajjangmyeon/udon and then follow the directions on packaging how to cook it

      Hi Bella, try to look for maangchi recipe. 1tsp. Of sugar Lang in-add nya. She's a korean kaya if I want authentic taste sknya ako tumatakbo😁
      I think chef made it pinoy style, which for sure many will love here in the Philippines ❤️

    And if you just use regular chunjang it takes times to fry up
    We fry up our chunjang just to kill the bitterness smell and taste
    Also to make it shiny/ glossy
    You can use flavoured oil when frying u chunjang but due to industrialisation you can grab it easily the pre fried chunjang

      You will see the first part on frying the bean paste 👍 as long as you there would be enough “oil” to cover (functions as a sealant to avoid air intact with the bean paste) and temperature of the ref is somehow stable- probably around a week maximum

    Hello chef, i’ve been craving for jajangmyeon and your recipe is always my go to. Talagang napakasarap and super pasok sa panlasa ng family ko. Unfortunately super mahal ng white onions ngayon, like 126pesos per piece, would it taste the same ba kahit red onions ang gamitin? Also, sa kalgukso na 1kg good for ilang servings yun? I saw it sa store kasi and mas mura kasi sya compared sa binibili ko na nasa frozen section. Thank you! ☺️

      Yes! I know, crazy onion prices lately!
      You may use red :) Normally One person's serving of Kalgooksoo noodles is around 120g. Hope it helps! enjoy cooking

    Actually that’s a simple version of jajjangmyeon you can add potato, zucchini and green peas
    In some areas in Korea bordered by north and even in North Korea we put daikon radish too

    Use chicken stock but if you really don’t then water will be ok but it’s more tastier when you use chicken stock (not the canned because it’s way too salty)

    Good evening po. I rarely see black bean paste po sa mga mart here samin. Only I have in my fridge is soybean paste and super fermented na nya to the point color black na sya. Can I use that instead?

      Hello, smaller korean groceries may not have but u can try bigger korean groceries for “chunjang” (the black bean paste). Iba siya sa fermented Soybean paste. If ur fermented soybean paste or dwenjang is super black na, hindi na siya pwede gamitin for soup because magiging mapait ang taste.

      Korean groceries must have “jajang noodles” however if u are unable to access any of the flour based noodles- i would suggest spaghetti could be an alternative :)

      Yes u may, although if udon the sauce wont “stick” to the noodles as much as it will when using kalgooksoo :)

      I got it at the Korean grocery nearby. You may try to ask them for “CHUNJANG” which is the black bean paste

      Nope it isnt :) its actually sweet (jjajangmyeon it self) but the base sauce which is the CHUNJANG (fermented black beans) is somewhat salty and slightly bitter. The fermented black beans or chunjang is different from the chinese or other asian stuff. I suggest that you buy CHUNJANG at Korean grocery stores 👍

      Yes you may, but of course it shouldnt be extra virgin type of olive oil. However i would better suggest other type of oil like sunflower seed, canola, soy, corn, which doesnt have its distinctive “scent”.

    Is this recipe authentic koren or adjusted to filipino taste already? The soy sauce and oyster sauce is i think an addition. I dont see that in conventional korean cooks

      Yes you may, but u need to consider that because every type of noodles has its distinctive taste, same goes with miki noodles. I would recommend spaghetti noodles instead if possible 😉

    I once tried the recipe with cabbage and it turned out bitter and disgusting... Now i just add potato, zuchinni and maybe carrot or radish and its way tastier... It's earthy with slight bean taste and a little salty and sweet.

      @@deliciousLeewithAra madam magkalasa po sila ng chunjang... black beans po ang tausi.. yung binili ko po na brand is yung Mr. Jinmi 1957 chunjang po yun so yung mga curious po kung ano lasa yan po ang ka lasa not my cup of tea, pero iba iba naman po ang tao para dun sa mga di nakain ng Tausi wag na sila mag try kasi di nila magugustuhan..
