Brandon's recipe and cook method choice is similar to our Smoked Spare Ribs recipe on the website. Smoked ribs are a staple on BBQ restaurant menus because they are flavorful, juicy, and simple to prep. This recipe keeps things easy for the backyard with a classic dry rub seasoning blend and a low and slow smoking process. Put these on mid-morning and you’ll have perfectly moist and tender ribs by dinnertime.

321 ribs are a foolproof way to get fall-off-the-bone ribs. The 321 rib method is based on smoking the ribs for 3 hours, wrapping them with liquid for 2 hours, and saucing them for the final 1 hour.

Excellent choice Todd! I'm not a fan of sweet BBQ, but it certainly has it's followers. Give me SPG and some seasoning salt, and I can cook BBQ for days! To be fair though, both of those racks of ribs look AMAZING!!

Last weekend I smoked a couple racks cut in half to try 4 different seasonings 2 different bbq rubs one sweet, 1 maple Jalapeño and one with just salt and pepper. I liked them all but was most intrigued by the simple salt and pepper (it just hits different). My wife and son were all about the sweet one. Of course I like pepper and spicy more, so wasn't really all that surprised

The best way to cook ribs, 6 hrs at 225 standing in the vertical position and never wrapped , wrapping is a waste of time, after 60 years of cooking ribs briskets pork lamb chicken, that is the best way to do all proteins
I disagree. 200 to 220 with a 3-2-1 on a slab or modify it to 3-1-0.5 for St. Louis. The trick is low n' slow, and with that comes some goodness you won't get in a rack, and I have enough 1st place trophies in ribs to know of which I speak.
60 years of cooking a certain way only means you are proficient at doing it wrong for 60 years. But then too, there really is no wrong way to do BBQ. Do your own thing if that is what you and your family likes.

Offset always wins.
3-2-1 is out dated for ribs.. Just cook them till they r done. I can smoked mine in 3-4hrs and they r perfect.
Only rule is to cook them how you like them!
