      East Bengali cuisine is not under rated. On the contrary it has influenced West Bengali cuisine so much that whole Bengali cuisine is now the representation of East Bengali Cuisine

      You guys should come and visit Bangladesh and try different dishes here. Especially, Kacchi Biryani of old Dhaka. Polao rice with roast chicken. Sweets from Tangail and rashmalai from Cumilla.

    East bengali thali incomplete without sutki bharta❤❤❤ and yes we include five types of vegetables fry(alu vaji begun vaji vatkorola vaji potol vaji mistikumor vaji) include daal with tomato combination... Just loved it to serve...A real east bengal thaali... Just perfect with pathisapta.... ❤❤❤

      There's a difference between East Bengali thali and Bangladeshi thali. This is not a Bangladeshi thali, not everyone who migrated from Bangladesh to Kolkata like shutki mach. My family is one of them. And also we don't call these preparations bhorta , bhorta is a common term in Bangladesh not in Kolkata.
      Being a Bangal (people who migrated from Bangladesh to India) I can confirm this is a true representation of an East Bengali thali, most of us don't eat bhortas and shutki.

      @@reshmee6818 Not every East Bengali Hindu likes Shutki. It is not necessary at all in my culture's cuisine and patishapta is also seasonal for us. Please don't confuse it with the present day culture of Bangladesh 🙏

      We have shutki maach but we east bengalies don't call it bharta... But yes... It's not something every one can digest. Also kochu... Shola kochu, kochu mukhi, loti, shaak..

    There is no end to East Bengal cuisine. You should visit someone's house to taste the wonder East Bengalis create with vegetable peels. Variety of shudh niramish (pre veg with onion garlic) dishes are unimaginable in any other part of India. Infact we have more vegetarian recipes than non-vegetarian.As per the texture, shape and taste of the fish the gravy is prepared in a unique way. If you prepare any other fish in the same gravy it might turn out to be a disaster.

      So true about bhorta and shutki but it is different for people of India where not everyone likes shutki. This is an East bengal thali as it is liked in West Bengal.

      @@Papin005 more specifically, Bangladeshi cuisine is basically Bangladeshi Muslim cuisine. Bangal cuisine is Hindu cuisine.

      @@rohitbannerji2756 yup that's true. Bangladeshi cuisine is very rich and heavy on onion, garlic and ginger unlike Bangal food where we use a lot of different types of phorons. Our bata is their bhorta alternative.

    East bengal (Bangal) cuisine uses plenty oil, spices, chillies , onion , ginger and garlic...
    West Bengal ( ghoti) cuisine uses comparatively less oil, spices , onion, ginger & garlic ..but ghoti dishes are sweet.
    Ghoti + Bangal make bengali cuisine diverse and sexy. I love both

      তথ্য টা 50% ভুল. East bengal cuisine বলতে ওনাকে ওপার বাংলার বা বাঙাল হিন্দু ঘরের মেনু পরিবেশন করা হয়েছে. ওপর বাংলা মুসলিম বাড়িতে রসুন পেঁয়াজ এর আধিপত্য বেশি. যারা হিন্দু (irrespective of migrating or not) বাড়িতে মাংস ছাড়া রোজকার খাবার এ (মাছ included) রসুন পেঁয়াজ ব্যবহার হয় না....

    My forefathers migrated from present day Mymensingh. Although we tend to have mix of each items and vegetables as per season, we tend to eat spicy. And yes, aam kasundi is a must. By the way, I love saag and parwal skin bhorta with chingri mach.

    East or West, Bengal is all about food , all kinds of food and good food. You get a massive range of variety in food which none other city offers.

    Best Ghoti dishes can be found from Thakur barir ranna, the cooking of Rani Rashmoni's house, the cooking of Gauriya Math, the cooking style of Ramakrishna Mission, the cooking styles of aristocrats of North Calcutta to say a few.

    Wrong way of eating the thali. You should begin with rice, fries , veggies, dal then followed by fish , mutton and then chutney with dessert.

    My grand parents, like many here came to West Bengal during partition, so I am used to eating these and similar food back home keeping the tradition of East Bengal or "Bangal" style of cooking compared to West Bengal or "Ghati" style. I am happy to watch this delicious video and while watching it felt like I could smell and taste some of those items, of course virtually...

    This thali contains Bengali food only, not like east bengal or Bangal Barir khabar. East Bengal's food must contain with Sutki, kochu Shak. "Panch rokom vaja, mug dal(Bangal bari hole chini debe na daal e) ghi eta to sob jaygar khabar re vai.."

    Being west bengali I know that how many types of 'phoron' are used in the cuisine, so it is a bit wrong statement that every dish contains only one 'phoron'. The cuisines contain 'phorons' such as Nigella seeds, Cuimine seeds, Mustard seeds, 'panch phoron' ( mixture of five whole spices), whole garam masala etc

      Ghoti der bhalo barir ranna onek besi diverse n tasty...it is a wrong notion that they use only one or two types of tadka...
      actually Bangal ranna is more rustic ...
      they use all types of thrown away peels for bhorta n their speciality is only bhorta
      And the only phoron they use in one and all is kalojeera and kanchalonka

    I am an Indian and from Kolkata, West Bengal but I personally like Bangladeshi cuisine more than west benfal cuisine. Even my cooking style is more like east bengal type though it is not intentional.

      @@lifeisajourney6710 Bangal/East Bengali cusinie doesn't necessarily mean Bangladeshi cuisine. You see, in modern day Bangladesh, much of the culture (atleast involving food style )has changed. I have been to Bangladesh. And it was odd to see that vegetarian dishes of East Bengal has almost completely been wiped off. The preparation techniques of some dishes and terminologies have become significantly different over the decades.
      You may ask, how do I differentiate between East Bengali food culture and modern Bangladeshi food culture if the former doesn't exist. There is the twist. You see. East Bengali Food Culture and Cuisine isn't extinct yet. If you want to taste the vegetarian east bengali dishes and food culture of East Bengal, prior to the new wave of Bangladeshi food culture which people mistake for the only "Bangal"/ East Bengali food culture,, you have to go to North East India, particularly in Tripura. North East has a large East Bengali (Not Bangladeshi) diaspora who came there before Bangladesh( and some lived there even before partition), and with them came the East Bengali cuisine. Niramish East Bengali cuisine, food culture hasn't been completely wiped out yet. It's hidden, unrepresented and flourishes in North East.
      And again I would add, modern day Bangladeshi cuisine doesn't necessarily depict the true east bengali/Bangal food culture.I will add, im not condescending Bangladeshi cuisine either. Food culture obviously evolves. But what I'm talking about is, when u talk about East Bengali/ Bangal cuisine in respect to the ones in India, Bangladeshi cuisine and food culture doesn't necessarily exemplify the East Bengali/Bangal food culture and cuisine. Of course there are similarities but there are differences too. Two branches of East Bengali food cuisine has emerged.     The chef described & presented East Bengali cuisine far better than the 6 Ballygunge place chef did to West Bengali cuisine..
    There is a lot in common in both the cuisines yet a lot of differences too, thats the beauty.

    Yes, shutki bharta Or luna ilisher bara(also a type of shutki), kachur shak ilish machher matha die, shimer bichir dal ghee die, lamba kore beguni bhaja, bakfuler bora, kathaler ichor with khesari daler bora and shimer bichi, niramish torkari with combination of lau er duga, kumar, alu, katla machher matha die murighanta, kumar pata athaba mulor pata athoba varun gotar pata bata with rosun etc etc. Aro anek achhe

    One more recipe I want to share.... It is my "mami"s recipe.... Take the heads of small prones... Wash it and make a paste with ginger garlic onion and chilli and then fry it

    One thing is pending in east bengal thali, one of the most famous dishes of eastern bengal is dry fish/fermented fish curry/paste. This is definitely a must try one (if you are not allergic to pungent dried fish smell)

    Great episode. The most distinguishing feature is usage of taro plant which is only found in east Bengal cuisine. Hilsa is main fish in east bengal whereas Prawn is primary for west bengal cuisine

    Be it ghoti or bangal or even bati, end of the day we are all bengalis...I LOVE to eat shutki and ilish mach and what not but I also love Kolai Dal, alu jinge posto, chingri malaicurry. Unlike China which started eating rats and bats, Bengal during famine really relied on plants and started utilizing everything from roots, to fruits to stem. For example, the banana tree, we eat pretty much everything from thor, mocha, kachkola, pakakola and even use the leaves in our cooking. I may be partial but I believe Bengalis, Assamese and to an extent Oriya and people from Meghalaya use their spices and ingredients really very well and in an unique way compared to any other parts of India.

    Loved the food presentation.. will be very glad if u could tell me which restaurant it is... Also Bengali food is served light to rich so the sequence of food was Missing while Kunal was having his food. First ghee bhat with 5 types of fritters pach rokom bhaja then dal after that illish then chitol muitha kosha mangsho ending with patisahaptta n choshir payesh.. Through this series people are getting to know different cultures so it's important that the sequence of food should also be shown as we r showcasing our culture to the world.. 🙏

    This east bengal thali is from the hindu house holds. This difference is important. Normally The muslim household food use lot of onion and garlic including in vegeterian and fish dishes. On the contrary Most east bengal hindu households avoid the use of onion and garlic even in fish preparations (unless some typical fish curry menu like kalia served in family functions). For example, the menu you tasted should not have used any onion or garlic except the mutton curry. May be the chitol muithya (depends on some house hold). our day to day fish curries are normally jeera/ginger or methi or kalonji based depending on the size, type and freshness of the fish. My personal view - The muslim house holds have mastered in meat based curries. They take the cake the chef and the bakery in this segment :).

      Yes, rightly mentioned, even bangals dont overfry the fish while making fish preparations,they are very lightly sauteed to take out the flavours of the fish

    Good to see this great thali! I miss terribly everything back in Kolkata! But one thing for sure - In the entire menu ... exclusive to East Bengal is only Ilish Bhapa, Chitol Muitha, Kochu Pata Chingri .. rest are common in both Bengal! Also, Ilish from Kolaghat (in West Bengal) was available to people of West Bengal always. Sorshe Ilish can be claimed to be from East Bengal.. but there are also recipes for Ilish, which entirely belongs to West Bengal! Anyways I just love the foods from both side of Bengal!
