Crazy amount of work! Having done something much smaller but similar in my house, I can't keep my engineer self from thinking how on large and flat surfaces, a surface mockup done flat wouldn't expedite such intense labor between cutting and layup. Commend you on your hard work!
At the side, a masonry paint of a similar stone color leaving the joints untouched in lieu of what appears to be a stucco finish, would work the full side elevation length as well
