This reminds me of Koshari! Koshari has all the same ingredients but with pasta too! Looks good!

why separating the lentil from its water if you gonna put them all together in rice later
If it stays in the hot water it will continue cooking and change the texture of the lentil

I think you should dry fry and grind the coriander seeds, no one wants to eat hard coriander seeds.
Or, you know, put everything in a cooking pot and eat in 15 minutes
It's black gram and rice .. In India we add more spice and cook black gram and rice separately and eat it will Dal 🇮🇳🇮🇳🇮🇳🇮🇳🇮🇳🇮🇳👍👍👍
This is Indian khichdi with Arabian twist. Will try making it Arabian way too but during winters only.
In Syria we make it with bulgur, not rice, and it is much tastier

in syria we use bulgur. I never knew people made it with rice
Mujadara is like Indian khichdi with slight cooking difference, will try it during winters as this is a heavy meal and should be consumed during winters.

Can make it with beans instead of lentils, brown onions & leave in pot. Normal rice is better. Love this simple dish. 🇱🇧🇦🇺

could i soak/cook the lentils with the rice together? greetings from germany :)
No I don't think so, cooking time of lentils and rice is different , If you soak and cook them together they will get a bit mushy. You can cook the lentils first for about 5 to 7 minutes and then add rice in the same pot. Hope this will help.

Did you use basmati rice? And what kind of lentils?
Yes they are basmati rice and brown lentils.
Why is it necessary to separate stock from lentils if you later pour it back in?
To stop the cooking process of lentils at that stage, otherwise, they will get mushy. another reason is you have to measure the stock.
