  • September 26th is always a special day for Bar Talk & Cocktails. It's Legendary Bartender Harry Yee's Birthday. Today would mark Harry's 105th. For those of you who don't know, Harry passed away in December 2022 at the age of 104. Wow! He certainly left his mark on the cocktail world. Not only did he create some of the most famous and tasty tropical cocktails, but he also pioneered many firsts that seem common place today. He was the mastermind who decided to pluck a beautiful orchid from the garden and gently place it in a drink. Talk about sipping on elegance and style. The genius, who looked at a tiny umbrella and thought, "Hey, this would make the perfect garnish!" And just like that, the world of cocktails became a tropical paradise, your own personal vacation in every sip.
    Harry's daughter Marilyn has become a good friend of the show over the years and has always been so gracious to us, whether by giving us personal insight about Harry and his creations, hidden recipes or sending us amazing memorabilia.
    Speaking of Harry's recipes, Marilyn sent me one more. One that's maybe a little less known? The Catamaran. I've never made one but I'm sure it's going to be amazing. Thank you Marilyn. This is going to be great!

    THE CATAMARAN
    -------------------
    3/4oz (22.5ml) PUERTO RICAN WHITE RUM
    3/4oz (22.5ml) VODKA
    2oz (60ml) PINEAPPLE JUICE FRESHLY PRESSED
    3/4oz (22.5ml) SWEET AND SOUR MIX
    1 BARSPOON (5ml) GRENADINE
    1/2oz (15ml) ORGEAT SYRUP
    HOW TO:
    BRIEFLY SHAKE ALL INGREDIENTS WITH ICE FOR ABOUT 10 SECONDS.
    STRAIN INTO A CHIMNEY OR HIGHBALL GLASS OVER CRUSHED ICE. GARNISH WITH BRANDIED CHERRY SPEARED TO A PINEAPPLE WEDGE AND AN UMBRELLA OF COURSE.

    HOMEMADE SWEET & SOUR
    1/2 CUP (120ml) FRESHLY SQUEEZED LEMON JUICE
    1/2 CUP (120ml) FRESHLY SQUEEZED LIME JUICE
    1/2 CUP (120ml) + 6 TBSP SIMPLE SYRUP (1:1 RATIO)
    COMBINE LEMON JUICE, LIME JUICE, AND SIMPLE SYRUP AND SHAKE TO COMBINE. REFRIGERATE FOR UP TO 1 WEEK.

    ORGEAT SYRUP
    EVENLY PLACE 50g ALMONDS ON PARCHMENT PAPER ON A BAKING SHEET. PLACE IN A PREHEATED OVEN AT 325° FAHRENHEIT FOR ABOUT 10 MINUTES. KEEP AN EYE ON THE ALMONDS TO MAKE SURE NOT TO OVER-ROAST THEM. IN A FOOD PROCESSOR, CHOP THE ROASTED ALMONDS BY BLENDING AT HIGH SPEED. ADD 200ml OF WARM WATER AND CONTINUE BLENDING UNTIL SMOOTH AND MILKY. STRAIN THROUGH A NUT MILK BAG AND PRESS WELL TO EXTRACT ALL THE MILK. WEIGH THE MILK YOU EXTRACTED AND ADD THE SAME AMOUNT BY WEIGHT OF GRANULATED SUGAR. FOR EVERY 150g OF MILK ADD 2g (1/2 tsp) OF ORANGE BLOSSOM WATER TO THE MIX. BLEND AGAIN UNTIL THE SUGAR IS DISSOLVED. BOTTLE AND REFRIGERATE FOR UP TO 3 WEEKS.

    Rest in peace to an all-time bartending legend! And it makes me tear up every time Bruce brings out a Harry cocktail as a tribute to bartenders gone by. Our bartender inventors who invent new ways to enjoy our evenings deserve a spot in the history books, and Bruce pays tribute to them in every single video. Give our best to Marilyn, and thank you Bruce for all the work you put into ensuring the world knows about his legacy.

    I'm so sorry to learn that Harry passed away. He had a wonderful long life. Your memories of Harry sound lovely! Happy 105th Birthday Harry!! This cocktail sounds so delicious Bruce!!     Really sad to hear of Harry's passing. Every year on the annual Harry Yee episode I was always happy to hear that he was still doing well. Definitely going to raise a toast to one of the great innovators of Tiki and tropical drinks tonight. Harry isn't mentioned enough as the pioneer that he was.

    Omfg Bruce I'm having this on October. I had 2 Dr funk cocktail old drink in the 30s but this one here. Holy cow it takes the cake literally. Made this for a party right now. Wow God bless I'm wasted

    The Catamaran is a drink invented by Shannon Tebay from Death & Co., a speakeasy style cocktail bar in New York.
    Ingredients
    2 oz (60 ml) London Dry Gin
    1 oz (30 ml) Don’s Mix. A 2:1 ratio grapefruit juice to cinnamon syrup.
    1/2 oz (15 ml) Campari. The original recipe calls for Aperol, which is weaker and sweeter.
    1/2 oz (15 ml) Lemon Juice. Freshly squeezed
    1.2 oz (15 ml) Coconut Cream. The original recipe calls for Coco Lopez, which is coconut cream mixed with sugarcane syrup.

    Hi Bruce I'm a subscriber and patreon member, I've been playing around with flips but have not quite figured out a perfect autumn recipe wondering if you had some thoughts or could make a unique video about a autumn flip, I've made pumpkin spice syrup and combined with a egg something like a traditional flip then mixed "batter" with a wonderful oat stout it's not terrible but lacks years of experience to perfect, hoping you might have some insight. Have checked multiple sources but to no avail I can find a decent recipe. Thanks for the wonderful shows and recipes. Cheers to Aaron and Viv as well for their hard work in making the show. Pumpkin spice simply syrups episode 2018 Oct.11. the recipe used for syrup. Also haven't a flip episode 😉.

      Batter-1oz of pumpkin spice syrup, 1 whole egg, 1.5 ozs of Smith and cross rum, I prefer rum over cognac, 200ml oat stout, mixed the batter and poured over the stout, also tried chocolate stout and ale, changed the rum used as well tried with wray and nephew over proof and havanah club, not sure if the cream is what I'm missing, but also played with upping the pumpkin spice syrup but it just gets lost, I'm not a huge fan of wine so haven't tried port or a more fruit forward wine, maybe a floral forward radler or I'm just trying to achieve the wrong flavor from this type drink, thank you for your advice.
