  • Recipe here: www.joyofbakin... The 1970s was a time when any baked good that contained a vegetable, and used oil instead of butter, was considered healthy. This trend made Zucchini Bread, as well as Carrot Cake, very popular. And true to its name, Zucchini Bread does contain grated zucchini, as well as grated apple. Both of these ingredients, along with oil, give the Zucchini Bread a wonderfully moist texture. Add to that chopped nuts, dried coconut, ground cinnamon and nutmeg, and it's easy to see why this quick bread has stood the test of time.

    This is crazy! My neighbor gave me zucchini fresh from the garden a few days back and I was just getting on UA-cam to see if I could find your zucchini bread 🍞 recipe, and here it is, uploaded first thing this morning! Wow!

    Toast the nuts always always always you can do it on your stove but never add them from the bag always toast them it truly makes a world of difference. I've been baking for 45 years and I wouldn't miss a shortcut on anything but this step you simply cannot get around. If you don't your nuts will taste chewy raw and won't take up the flavor of your spices they will remain foreign in your recipes.

    Never tried apple in it. Looks very good. Will have to try it. Every year I have a lot of Zucchini out of the garden , grate my zucchini and put up in freezer. Later in the year I thaw it and drain it, then make Zucchini bread for Christmas presents for friends and neighbors. Will have to try your recipe. Thanks for posting.

    I made this. It is so moist and great flavor. It made 3 small 5x3 loaves. Did a lemon glaze instead of frosting. added 2/3 cup of dates and dried apricots. Definitely a keeper.

    Have zucchini from my garden. Great time to try this recipe. The only thing I do different with my cream cheese frosting is I use regular white sugar instead of confectioner sugar. Can`t wait to try this. Love you and your recipes

    Oh wow I simply adore carrot cake, so not doubt I will thoroughly enjoy this too !!! Zucchini is something I would never think about adding to a break like this, thank you for sharing this recipe, I’m looking forward to having a go myself this weekend ^_^

    I remember going through a phase of putting cream cheese frosting on every cake. I just love that flavor.
    I haven't made zucchini cake in decades. Yours looks tasty with the apples and coconut.

    This bread is absolutely delicious. I often use all apple and no zucchini at all, or carrots instead of zucchini and just 3 tbsps of sugar to the whole bread. Makes a delicious breakfast loaf.

      About 30 minutes
      Bake them for longer if needed

    I always thought adding 'sweet' veg such as carrot or parsnip came about during WW2 due to the sugar rationing! Whichever it was, I love them all and will be definitely be making me a gluten free version of this recipe as I have coeliac xx

    I'm using my mini bundt pan, for 8 mini bundts, how long would you suggest I bake them? Lovely recipe💕

      Brenda's Pampered Kitchen in my experience, when you go from making a banana or zucchini bread recipe in a loaf pan to a mini muffin or bundt tray, I generally reduce the baking time to about half. 25-30 minutes or so, and I do about 10-15 degrees lower. Not sure why I think they’re more prone to burn/cook unevenly, but I feel like a slightly lower temperature you can always leave them in a couple of extra minutes if you need to

    I tried this recipe without the frosting it was delicious. My work colleagues loved it. The only downfal the courgette/zucchini bread was too oily for my liking.
    I used maple syrup instead of normal sugar. l also used oatmeal flour which alot healthier incomparison to regular flour. I am in the process of baking another one for my work colleagues

      Maple syrup is not much better than regular sugar health-wise (it's a fad) and whole wheat flour would be a better substitute than oat flour for the texture, and it is very healthy as well.
      I just add 1/4th amount of sugar (brown) mentioned in the recipe or even lesser than that and add some raisins or other dried fruits.
      The bread was just right. Maybe it became oily/sticky because of the substitutions.

      If you wanted to reduce the sugar you would have to experiment with the amount and then see if you like the results.

    Hi Stephanie, this zucchini cake is fantastic, I've made this recipe countless times and it's always a hit. I live in Brazil and would like to know how I can make it gluten free. What combinations of flours could I use and in what proportions. Here in Brazil we don't have flour as good as you have there. Help me please. Thanks.

    I tried your yogurt cake. Very tasty and moist. I want to avoid eggs. Shall I replace eggs by 100ml of curd or oil?

    Few Questions:
    1. Can I substitute AP flour with almond flour for a healthier version?
    2. Can I reduce the amount of sugar to 50% as I have low tolerance for sweetness?
    3. Can I use monk fruit sweetener instead??

      Interesting.
      They'll probably want to use monk fruit instead of honey. Perhaps a KETO diet. Like me. I have 100% pure monk fruit, no additives. VERY sweet. I just can't figure out why when I add some to my home brewed, decaf tea, it simply doesn't sweeten it at all. Hhhmmmmmm......

      1. No, use whole wheat flour or 3/4 whole wheat flour and 1/4 almond flour but all almond flour would not work that well in terms of texture. If you're doing this substitution whip your eggs to soft peaks and then add the rest of the wet ingredients. That should compensate for the denseness which almond flour gives.

      I used 2 small cups of cinnamon applesauce and it turned out great. So moist. I also doubled the ingredients to make 2 loaves. Loved the coconut in this bread. Thank you Stephanie!
