Sure, if you just assume that everything in the gospels is literally true, then yes, they saw the risen Jesus. But if you are already assuming that, why even appeal to martyrdom? Just skip to the part of the book where it says Jesus rose.
If Frank is trying to use this as evidence for Christianity, then it is a circular argument. If you aren't convinced that Jesus rose from the dead, then probably aren't convinced that the disciples ate with the risen Jesus either.
No. If you doubt the resurrection, which is reasonable, then the actions of those who were eyewitness to it is strong evidence that the resurrection took place.
There is archaeological evidence for some of the disciples dying as martyrs.

There were hundreds of people who saw the events described in those books that would have been able to verify their accuracy. The isn’t a historian of ancient cultures anywhere that wouldn’t give his eye teeth for an historical record a tenth this complete. It’s almost an embarrassment of riches. But for some reason you want to ignore them. If those aren’t good enough for you then really nothing will be.

Who were all these NT writers that were martyred? Paul wrote most of the NT and we have little confirmed facts about his death. Some sources say he was beheaded, but the fine details of how and why is not clear, from what I have seen anyway.

You should read Foxe's book of martyrs. It's good read. It starts with Stephan's stoning.
The martyrdom accounts come from legends. Nothing in the new testament which was still a century old after Jesus. And Christians will point to the martyrdom of believers in the 400 years after Jesus as a testament to the truth. Those are the same as Muslims. Joseph smith died and never recounted. Founded Mormonism. Frank is twisting the blanket here.

This is a false equivocation. Turek should have compared the martyrdom of early Muslims in the time of Muhammad and shortly thereafter, with that of the Christian martyrs. Which there are several.

Sumayyah Bint Khayyat seems to be the one Muslims like to cite as being the first. I couldn’t remember her name, so I googled it of course. The list of early martyrs seems more extensive than Christianity’s. Not that this means anything really.
