chocolate pancakes: 2/3 cup (80g) flour, 1 tbsp flax seeds, pinch of salt, 1 tsp baking powder, 1 tbsp cacao powder, 2/3 cup (160g) soy milk + 1 tbsp apple cider vinegar, 2 tbsp soy yogurt
chickpea pancake: veggies of choice, I used mushrooms, leek & garlic; 1 cup (125g) chickpea flour, salt, pepper, scrambled egg seasoning, 1 tsp baking powder, 1 tbsp apple cider vinegar, 1 cup (250ml) water
focaccia: 400g bread flour, 300g water, 3g yeast, 7g salt, 15g olive oil; 3 rounds of stretch & fold every 30 minutes, then set in the fridge overnight. the next morning, put in a well-oiled baking dish and let proof until doubled in size. bake at 230°C for 20-25 minutes
tofu scramble: www.amandaduck... (i added spinach)
chana dal-inspired stew: 1 packet mushrooms, 1 red onion, 2 cloves of garlic, ginger, 1 tsp each turmeric, cumin, coriander, tomato paste, passata, vegetable broth, soaked chana dal, spinach, frozen peas, tahini, salt & pepper to taste
mushroom fennel pasta: 1 tsp fennel seeds (dry toasted), 1 packet mushrooms, 1 onion, 3 cloves of garlic, 2 tbsp tomato paste, salt, pepper, 1 tsp cumin, a good amount of pasta water, 2 tsp nutritional yeast, spinach, chickpeas

Hi there! Your video came up in my home page while scrolling. It’s very relaxing and love your meal ideas. I just wanted to say that maybe in the soup you made here 2:48, before serving you could add some lemon juice or lime juice. The vitamin C will help you absorb more iron. There is some in the spinach as well, but not enough to absorb most of the iron in that beautiful soup. Another way would be adding bell pepper, they are also rich in vitamin C.

whats your overnight oats ratio? the texture always looks lovely!
i do 1:1 soy milk and oats usually.
this time i added a spoonful each of chia and flax, so i did 2:1.
and then add thick yogurt in the morning ;)
