what i eat in a week: super quick meals (vegan & realistic, ingredient prep) 🍀

  • 🍇 recipes:
    bircher muesli (3 servings): 200g oats, 2 tbsp each sunflower seeds & flax seeds, big pinch of salt, 1 tsp cinnamon, 1 grated carrot, 4 tbsp apple sauce, 1 cup/250ml soy milk, 1 packet/400g soy yogurt
    mustard dressing: 2 tbsp grainy mustard, 2-3 tbsp olive oil, 2 tbsp apple cider vinegar, salt, pepper, smoked paprika
    marinated tofu:
    peanut soy: 1 tbsp peanut butter, 1 tbsp soy sauce, 1 tbsp rice vinegar, pepper, grated ginger, water to thin
    tahini dijon: 1 tbsp tahini, ½ tbsp dijon, 1 tbsp apple cider vinegar, smoked paprika, salt, pepper, water to thin
    turmeric parpadelle: zucchini, garlic, turmeric, salt, parsley; topped with more parsley, tahini & lots of black pepper
    pasta salad: pasta, crispy chickpeas, dill, chives, cherry tomatoes, bell pepper, red onion, arugula, pumpkin seeds, mustard dressing
    tzatziki: 4 tbsp soy yogurt, ½ cucumber (grated and pressed), 1/4 red onion (finely diced), 1 clove of garlic, salt, pepper, parsley, chives
    sumac-marinated salad: shaved kohlrabi, ¼ red onion, lettuce, salt, pepper, sumac, lemon juice, olive oil
    sesame ginger chickpeas: 2 tbsp sesame oil, 1 tbsp soy sauce, 1 tbsp rice vinegar, black pepper, grated ginger
    buckwheat porridge: ½ cup soaked buckwheat, 1 ½ cups liquid (soy milk & water mix), pinch of salt (cooking takes around 20min); 3 tbsp soy yogurt stirred in after cooking
    toppings: stewed cherries, tahini, chopped pistachios, flakey salt
    quinoa fritters: around 280g cooked quinoa, 2 cans black beans, fresh parsley, 1 tsp each cumin, chili, smoked paprika, salt, pepper, 3 tbsp chickpea flour

    Great minds think alike for meal prep. You do exactly what I do on a Sunday to make the coming week abit easier & quicker. I always make some sort of overnight oats, marinaded tofu or tempeh, roast some chickpeas, roast some veg, a salad dressing, cook some quinoa (either for lunch salad bowls, for a dinner side or my new favourite at breakfast with coconut yoghurt and fruit). Some weeks I'll make jackfruit tuna or coronation chickpeas

      On a Sunday I will cook a pan of quinoa - either white or mix of white/black/red. Then I have a container in the fridge for breakfast, lunch salads or heat with evening meal.
      For breakfast I just put some cooked quinoa in a bowl and served with some fruit (usually something like mango, pineapple, kiwi, papaya or grapefruit), some coconut or soya yoghurt, drizzle of tahini or peanut butter, scatter of seeds and then pour some homemade coconut or soya over the top. I just build a bowl based on what I got or feel like. It's something I had in Mexico on holiday and lovely when it's warm instead of overnight oats or cereal.
      For coronation chickpeas there are lots of recipes online but all very similar. I tend to use this BBC Good Food one but prefer a lighter version with 50/50 mayonnaise and dairy free yoghurt. It's really versatile as can have it in a sandwich, roll, wrap or pitta aswell as on a baked potato.

    Been following you since the start and this video just popped up.
    Loved it very much. You make eating plant-based so easy.
    I have been Vegan for so long but I can't make up any meals myself. And I am a easy peasy woman. So your video's are so helpfull.
    The texts in the screen could ne wat larger if you ask me. I can hardly read them on my phone. But that is the only thing I want to give as comment.
