    For those of us that don't care for ripe bananas I can't imagine they would like this. However, what a creative way to use up ripe bananas. I tend to freeze mine and use for banana bread. Great video Louise. Now I have to go work on organizing my pantry. Have a great day!

      If you like banana bread, you will probably like this. It doesn't have that weird alcohol taste of a really ripe banana, it just tastes like a fresh banana in jam form.

      @@TheSaltedPepper I would have to agree. there is no way I would eat a ripe banana, but they are the best ones to use for baking or preserving, in fact, if somebody is baking with unripe bananas, they are missing out on a big party in the mouth!

    As a T2 diabetic I will be experimenting using cup per cup of Stevia instead of sugar. I'm supposed to get my Foodi today!! Can't wait!! Thank you for your vids!! You helped me make up my mind of which to buy...the Hot Pot or the Foodi...😁🥰

      I'm going to test a sugar substitute soon, I would suggest getting low sugar pectin for the best results.

    Ohhhhh can't wait to try this. Love bananas, and this sounds heavenly. Did you put the lids on while it was hot? How do you seal the jars? Thanks!

      I didn't "seal" the jars as in can them. I did put the lids on when they were hot and the heat "sealed" them, but I store them in the fridge, not on the shelf. I didn't find an approved canning recipe, so better safe than sorry.

      @~Vashti7~ Here's my update! Wow!!! I'm 57 and I'm just now tasting banana jam?! Boy, have I been missing out! I made my 1st (2-banana) batch a couple weeks ago and had some on a bagel the next morning. It was dee-licious! Now I've been testing it on different items to see what works. It makes for a great peanut butter & banana jam sandwich, by the way! 👍👍😁

      As this was my very 1st batch, I've learned a few things:
      1. If I let my bananas turn black (as I did), I can decrease the amount of added sugar a bit.
      2. I need to stop cooking my jam a bit sooner. I almost made "banana glue!" 😂 Tasty, tasty banana glue!
      3. I blended my initial ingredients, but 1/4 cup of water (for 2 'nanas) evaporates pretty quickly! I may add just a bit more water to slow things down a bit next time.

      This is a great recipe! Thanks a million! 😊
      P.S. I added just a bit of water to my jam, stirred, and it loosened right up. 👍

      I'm not sure about canning because I couldn't find any approved canning recipes using bananas in a jam. Sorry, I'm not well versed on what can and can not be canned.

      Different fruits have different levels of pectin, so it isn't always the best idea to switch fruits in a jam, jelly, or preserves. I would find a recipe for the type of fruit you want to use.

    I love cardamom. I put in banana breads, carrot cakes, anything that has a similar spice blend. Just add this hint of "secret flavor"

      I couldn't find a canning recipe for banana jam, so I'm not sure if the PH is going to make it safe for canning. Sorry, I just don't know the answer. I would think the sugar content would be fine, but I would never want to give unsafe advice. I keep mine in the fridge.

    I'm wondering if Ultra Gel would work as a thickener instead of pectin? I'm diabetic so will try with a combo of Splenda, and Kroger brand stevia. I use both in all drinks tea, coffee etc because the combo cancels out the aftertaste of each one. I sometimes add half or less of real sugar to a recipe to get better texture. I've experimented with all sugar sub in pound cake and cheesecake, both came out subpar for my taste. Bananas are my jam anyway so I am definitely going to try this. Thx for sharing.

      I'm not familiar with ultra gel, so I am not sure. You can use a low sugar pectin though.

      I've had issues with jams setting because there isn't a high enough consistent heat in the blender. It's been hit or miss with different jams and jellies I've tried.

    Sort of like Banana Ketchup in the Philippines
    they use Saba bananas instead of tomatoes
    and they color it red to make look like a Tomato Ketchup.

      Thank you so much! I think pectin is called pectin in the UK as well. It's a gelling agent for jams, jellies, preserves.

      Lemon juice is used in jams/jellies/preserves to change the ph and helps set the jam.

      It's best to make smaller batches of jams and jellies for consistency and a good outcome. You can probably double this one though.

    a question I have that you didn't answer in the video ( maybe you can add it in with text?) is how long the jam will last and if it has to be stored in the fridge or can you use the pantry till the jar is opened?

      Store in the fridge and it lasts at least 4 months unopened.

    Louise, funny you should mention banana chips. I just dehydrated a quart mason jar full from bananas the food pantry gave me to compost. I couldn't bear to throw them all out there. Can you suggest a way to use those chips with this recipe? The chips were made from ~1/8" round slices. Maybe a count of so many chips, rehydrated with so much water, then proceed with the recipe?

    An idea to use the jam, and I know this may seem weird/gross, but try and see first! Use as a spread on a pizza and smother with cheese. It is SO good! I’ve been adding slices of ripe banana to pizzas for years. Let me know what you think 😋😋😋

      I kept it in the refrigerator. I couldn't find a definitive answer on hot water bath canning, but with the sugar content it seems like it would be fine. Please research it before doing it though.

      I haven't tried it that way, but let me know if you do! It would decrease the volume, but I'm not sure about the effects on it setting up like a jam.

      Since it's not an approved canning recipe, I keep it in the fridge. It might have the right PH to be water bathed canned, but since I couldn't find a ball canning recipe using the ingredients I used, I would store it in the fridge.

    I have bananas that are still yellow will the jam still be flavourful?

      For the best flavor, I would wait for them ripen. People also bake ripe bananas to speed up the ripening, but I've found that let them ripen naturally is the best way. The darker they are, the better the flavor.

    I musta done something wrong cuz I halved the recipe but it got super thick and didn’t even fill two 4 oz jars all the way

      It may have reduced too much, you might be able to thin it some by adding some water and warming it up.

      @@nikkilyne36 It's hard to describe, but if you like peanut butter, it's amazing. The heat from the burger melts the peanut butter (so you don't use any other condiments except bananas or banana jam) and it's so good! It sounds so weird and my husband and I were traveling and saw one on a menu, he got it and WOW! Give it a try!

      This is not a canning recipe, so keep it in the fridge. I looked for a canning recipe and couldn't find one from a reputable source, so I really don't know the acid level in this type of recipe and I'm not sure if it would be shelf stable after water bath canning.

      It's not a canning recipe and I'm not well versed in canning enough to answer that. Most jams have enough sugar and the right ph for hot water bath canning, but I couldn't find a banana jam that was canned by a reliable source, so I keep mine in the fridge.
