How is everyone doing? If you are in the UK we hope you are enjoying this prolonged period of warmth we are having! It’s been amazing.
So an extra vlog from us! I thought a separate vlog was needed as this has been a brilliant journey from growing our mushrooms aboard to ultimately eating them alfresco on the towpath. It’s been an extraordinary joy to watch them grow and has had everyone aboard the narrowboat Oddstruck Belle fascinated.

The Recipe.
This has only been tried on large clumps of mushrooms.
The sauce/marinade
3 tbs maple Syrup
2 tbs Hendersons relish
1 tbs liquid Smoke
2 tbs Olive oil
½ tsp Cumin
1 tsp Smoked paprika
1 tbs Tomato ketchup
Pinch of salt and pepper
Mix and set aside
The Mushrooms
Place the mushroom clumps in a large frying pan with very hot oil, and then use a heavy pan to weight the clump down. This flattens and intensifies the flavours of the mushrooms, do not add any seasoning until the clumps have been flattened and browned on both sides. Once they are nicely browned you can add the marinade/sauce and allow it to caramelise on a low heat, turning the mushroom clump once. At this point we added strips of yellow peppers, tomatoes and beets to the sauce to make a warm salad to be served with the mushrooms.
Serving
Don’t be afraid to just have these as they are the first time, straight out of the pan with some nice bread to soak up any sauce, you won’t be disappointed. Or if you want to pretend you are slightly civilised as we do in the vlog(!) then you can serve with a rocket salad some pittas and some fresh humus.

Just notice you've provided the recipe duh.. I'm in the US so the only thing I'm not familiar with is the Henderson's relish. Gonna check it out. Looks like I can use Worcestershire.
Those mushrooms were gorgeous when they got full grown! And they certainly did look like they tasted divine! I always enjoy watching y’all cook, create, cruise, and care for each other, including Luna! Bye for now, from over here in Portland, Oregon!
