Made this tonight and it was a sure winner in our house. Even my 16 year old picky son devoured it. I bought the puff pastry “patties” by mistake (because I didn’t look closely at the box when I took it out of the grocery store freezer), but It worked out great because everyone got their own personal pot pie. my boyfriend and I made this last night with a few changes: we added some whole milk and butter to the filling to make it creamier! Used the second puff pastry as a base and used fennel instead of celery because Trader Joe’s was out. it turned out beautifully! Thanks Alison for this treat :)
Pot pie is our favorite way to have leftover Thanksgiving turkey. Throw in leftover gravy, veggies boil up potatoes and bake in a double pie crust. Yummy 😋
“2 garlic cloves? 6 garlic cloves.” Truly how I cook but extra funny because you wrote the recipe. I’m a pot pie queen! My favorite one I’ve ever made was duck confit pot pie with a homemade duck fat crust. A few weeks ago I made a vegetarian mushroom and kale pot pie (recipe from Julia Turshen).

I made gravy with duck fat and duck stock (you could totally use butter and chicken stock tho) added veggies and herbs like Alison does in this video (I probably put carrots in tbh), and then mixed in shredded duck confit. For the pastry I just used an all butter pie crust recipe and replaced half the butter with duck fat, but it would still be good with a regular crust or with dufour like she used in the video.
I love how she changes the recipe as she goes because recipes are really just about what you’re feeling on that day. I’m always telling my dad to stop following recipes so closely and just using them as a guide.
I knew you had to keep your eye on David when you started taking the chicken apart. That birthday sandwich is still in his mind. I love the twist on chicken pot pie. Yummy. Going to try it.
Marie Calendar's pot pies were my favorite growing up! I always ate it with a bowl of rice. The rice soaks up the gravy nicely. Definitely going to make this soon. Thanks for the tip on using dufour puff pastry. I've made it from scratch but I found that the pastry soaked up the gravy as it baked too quickly so I had soggy pockets throughout the crust which was not fun to eat.

I made this last night and it was so so good! I've never been a huge fan of many chicken pot pie recipes because I found them too gluggy/creamy. This was perfect. Comforting and rich, but somehow not overly heavy. I had never used tarragon before but a little in this dish really elevates it and makes it feel more than just average home cooking. Will def make again, thank you!
There was a restaurant chain in the south years ago that served chicken pot pie and butter lettuce salad with shredded cheddar cheese and it was the best. So cozy and yummy.

Real question (and a big one for me): How do you keep your stove clean from chicken fat spatter? I made your lemon/date chicken last night and it was delicious but holy cow...my stovetop was an oil field after that. And I did it in a Dutch oven (so high sides). Yet your stove never seems to get a spot of grease on it. How do you do that?
Make sure your chicken was patted dry before going in, dont use too much oil just a little bit to get it going, dont let the heat get too high, if it stills spatter like crazy I actually like to crank the heat up to the higher setting and put a lid on, still comes out super crispy and golden brown. You do need to keep an eye on it tho

When Alison says use "good puff pastry" believe her. I used some random brand, can't recall the name and it browned nicely but very dark in only around 19-minutes. The underside was uncooked. I peeled it off and salvaged it by using mashed potatoes which I finished off in the broiler, then added chopped chives on top. So I made a Shepherd's Pot Pie? In any event, it was a showstopper. It truly tasted like we were at a fancy restaurant, everyone wanted seconds and thirds! Make this, it's just perfect. flavor wise.
No crust at the bottom! Thank you, I feel vindicated. Just put it on the top and stop trying to cut it pretty. Just get in there and scoop it out! Thanks, Alison. My impostor syndrome is gone now. I did, however, take my CVS' "40% off entire order" coupon and use it to stock-pile my freezer with Marie Callender's Pot Pies, which I still immensely love, especially at such a discount.
Skin-on, bone-less is the normal way to sell raw chicken meat in Japan. Of course, you can get the leg/thigh combo with a leg-in - but most people would still go for skin-on, bone-less legs and thighs, which is the most popular. I also have looooved chicken pot-pie from childhood! I love “adult” versions like Alison’s

You've mentioned Better Than Bouillon a few times in recent videos. When I went to the store they have about 5 different kinds. Which one are you referencing, vegetable, chicken etc?
I think Miss Alison (said with respect & affection) uses the roasted chicken base. I was lucky to find near me ~ actually organic roasted chicken and it’s great. my preference before was knorrs & I’d cut the cube & rewrap as needed. better than bouillon is so much easier. I think it’s economical in the long run, too ~ it’s in my fridge and I use regularly. one of these days I will try the vegetable, too, maybe the beef. good luck, have fun.
Can puff pastry in the states only be bought frozen? I’ve been searching for it here and in Europe it’s never frozen, just cooled and you buy it either in rectangular or in a round shape.
How do you cook on cast iron like this without a suction hood? Like we also can’t hear one in the background ? When I fry anything like that someone has to standby the fire alarm ?

I clean as I go, Jeff! Just wipe it while it still hot, then spray with cleaning solution before you retire for the evening.

You've mentioned Better Than Bouillon a few times in recent videos. When I went to the store they have about 5 different kinds. Which one are you referencing, vegetable, chicken etc?
I think Miss Alison (said with respect & affection) uses the roasted chicken base. I was lucky to find near me ~ actually organic roasted chicken and it’s great. my preference before was knorrs & I’d cut the cube & rewrap as needed. better than bouillon is so much easier. I think it’s economical in the long run, too ~ it’s in my fridge and I use regularly. one of these days I will try the vegetable, too, maybe the beef.

Can puff pastry in the states only be bought frozen? I’ve been searching for it here and in Europe it’s never frozen, just cooled and you buy it either in rectangular or in a round shape.

How do you cook on cast iron like this without a suction hood? Like we also can’t hear one in the background ? When I fry anything like that someone has to standby the fire alarm ?
