    I am _beyond_ thrilled to learn that Alison Roman's sheet pans look just as gnarls crusty as mine! Excuse me as I slip into the kitchen and discard my steel wool scrubber thingy.

      Just spray them down with easy off and let it sit for ten minutes then attack it with a no scratch dobie pad scour pad back and forth short overlapping scrubbing motion baking soda also work s and finish with a good dish washing liquid and keep rinsing it in hot hot water

      Yeah, nah. Mine get a wipe off unless there’s stuff burned on, in which case they get soaked and a quick scrub.......but no trying to keep them spotless. They’re PANS ffs........for using, not looking at.

    “... To look forward to” is so true - years ago, while convalescing during a long recovery from a big surgery, I thought willfully about the different meals I was going to have after returning to health, and eventually I did, although it took 2-3 years. W/ the situation today, some people will not make it to have certain meals again; nonetheless, it is necessary for the will to survive.... So BRAVA !!!

    Alison Roman never ceases to amaze me. She is showing novices and professionals alike this nuanced simplicity in her recipes that invite anyone to try new methods of cooking, or even completely new foods in general. All of her recipes I try turn out perfect on the first try, and I swear she's a goddess in the kitchen. I don't know how she does it every time, but I want her to keep doing her thing, forever.

    chopped liver is a quintessential passover recipe and i strongly urge any non-believers to try it at least once. it has so many carmelized onions or shallots that get so sweet, so jammy, and the fattiness of the liver.. like truly SO delicious and creamy.

    I want to thank you for your recipes. The matzo ball soup was absolutely the BEST one I've ever made. I never added chives to the matzo meal and that made all the difference. Next year when the party is ON I'm going to really go all out on all of your recipes. I made the parsley salad...OMG...game changer for those of us that love parsley. So thanks!!!

    I LOVE Alison Roman!!! She displays really excellent cooking techniques. I'm from the South (Not Southern!!!) , but those short ribs look like they would rival my grandmother's. I loved her Hanukkah dinner as well.

    Oh, my, goodness, everything looked so good...and a good time with your crowd...such fun to watch. Not Jewish, Christian and feeling a little sad to be forgoing family and church get together over this weekend but will be doing some connecting online the best I can. In the future I will definitely be trying that short rib recipe and I'm quite intrigued by the potato casserole. When I was a kid my mom would tell me to put a spoon in my mouth when chopping onions.

    So much to comment on, but I love making matzo ball soup and getting some tips on doing things a bit differently (alot differently) gives me a fun recipe to look forward to among all the other dishes. this video has a crazy amount of depth and layers. Alot to dig in to for people whenever they pull it back up to make that dish that caught their eye. Only wish I had everything on hand to make something here right now. Ah well.

    Alison I love ya! I schlept to three publix markets near me here in SoFla and finally found my rendered chicken fat. Lordie lordie I miss NY!!!!
    Made my matzo balls and they were a hit! Thank you. My family and I truly enjoyed them. I’m thinking I want to make another batch because they were eaten so fast. Yummy yummy! I added some of the pulled chicken that I poached to make the chicken stock. It was delish!

    And in every home-grated potato kugel there is a faint pink tint of blooddrops from the maker. This is tradition unless you use a cooking machine.

    Potatoe Kugel, something like this my grandfather used to like. IT's called "Kartoffel-Puffer", it is the same ingredients but you cook it in the pan in small portions. Greetings from germany!!

    The onion thing was on another channel recently, and a scientist mentioned that chilling/freezing the shallot or onion keeps the sulpher/chemical from aeresolizing and becoming gasseous as easily. so...chill your onions/shallots and it will lower the amount of tears.

      @@LindseyObrooke you're not freezing it, just chilling it like if you were to chill a salad with onion in it. No one would go screaming from the room

      I found that running it under cold water after at least cutting it in half also slows the aerosol. (If i have to dice the onion or shallot, then i cut into strips first and then run under water while keeping the half intact in one hand.)
