- This chocolate banana bread is an ideal snacking cake, and also a good starter dessert if you, like Dan, are intimidated by baking. It teaches you some fundamentals, while being basically error-proof. Deeply chocolatey, with many little pockets of banana throughout, crunchy on the outside and never dry on the inside, it’s just a really great dessert to have in your repertoire.

YES. He can just sit on a chair at the side of the frame and be himself .
The biggest aha moment I ever had in my journey to (even basic) baking was finding out that baking soda is activated by acid and baking powder is activated by heat. That alone let me wrap my head around recipes in a way I hadn’t been able to do before. It let me adapt recipes with more confidence (as I do with cooking because I understand it more). Truly a revelation.

@@songarinsk baking soda and baking powder are often used together. The soda makes the cake (or anything) more firm so it doesn't deflate too much after you take it out of the oven. Baking powder is more for making things fluffy. Baking soda + cream of tartar = baking powder
actually the thing that activates baking powder is water! (Although some “slow acting” powders do react only at higher temperatures). baking powder is actually just a mix of baking soda and tartaric acid, so when you add a liquid the two combine and react!
Baking powder is just baking soda with an acid (usually cream of tartar) already mixed in. The chemical reaction is exactly the same. Some recipes use both baking powder and baking soda but the only reason to do this is to tweak the acidity level (i.e. if you want less acid than in baking powder)
As an avid home baker( and retired professional baker) I suggest draining an 8oz can of crushed pineapple in juice and subbing it for equal amount of mashed banana. The acid will enhance your choice of cocoa powder. Just try it once. You'll love it. Also, FYI for your beloved followers, you are right about the Kitchenaid K5. It's the gold standard workhorse of the 20th century and today. I own one from 1979 which was and still is my go to machine . I had the brushes replaced 20 years ago. That's it. I picked up another in a garage sale unused 3 years ago. My grandchildren will be using it. The interior moving parts are metal made in America and the motor is without equal. It's the goods.
You did good with the older KAs. I followed a long discussion on The Fresh Loaf and learned that KA used to be Hobart! After separating from Hobart the mixers are no longer the workhorses they used to be. That thread connected me to a place that refurbished Commercial KA mixers. The difference is enormous! I’ve got a lifetime machine! I may try your pineapple idea!

Dear Alison Roman, I've made this 8 million times since you first published this recipe. About a million of those 8 million times, I've made stupid mistakes like using salted butter instead of unsalted, or forgetting to top it with sugar, or the most important top banana. But you know what? It's been amazing each and every time. My friends and family and I want to thank you from the bottom of our fat little bellies. xo
Cocoa powder has acid, so the baking soda is probably reacting with this. Also, yep, brown sugar, because Molasses is an invert sugar with an acid added. So, really, you're golden with the ingredients here. I can't wait to try this!

Actually, while regular cocoa powder is acidic, Alison has used a dutch-processed cocoa powder in this video, which is neutral. Switching to a non-Dutched cocoa powder may help with the rise by providing more acid for the baking soda to react with. However, the ripe bananas in this recipe are another source of acid, so the baking soda should work just fine.

What on earth is wrong with putting chopped nuts in? Roman is fun, but has some really idiosyncratic tastes that are often quite child-like.

I love your videos! It’s a great way to relax after a long day at work. Thank you! So….Baking soda is an alkali and needs acid to create the carbon dioxide for a reaction. It is used with acidic ingredients like buttermilk, sour cream, cocoa powder, and brown sugar to help achieve a nice rise. It is also more powerful than baking powder and is used in smaller amounts to avoid imparting a bitter flavor. : )

I pretty much exclusively use my late Nana's KA standing mixer....I have no idea how old it is but it has never failed me . It looks very similar! I was half way through placing a FD order for groceries when this video popped up, and what a good timing! I added mascarpone and light brown sugar and fresh baking soda to my cart ( had the rest and some bananas ready to explode) can't wait to make it tomorrow :)

I just made a double batch as a result of a fridge raid. Got rid of all the frozen bananas and the ones I forgot were on my counter. None were good enough to slice so I didn't bother. I didn't have the gumption to buy sugar in the raw / demerara either. Still, this recipe is a sleeper hit. Drop everything you're doing and make it right now. I ate a third of a loaf of this amazing bread which is really a beautiful cake.

i thought you said in your video that the recipe in the link would have the weight measurements for the ingredients. the recipe in the link only has cups, etc listed
You can lower the mixing attachment on your mixer by twisting the screw right when the head of the mixer is up. Makes it so handy for getting all the mixture at the bottom of the bowl mixed in.
This video comes at the PERFECT time as I am isolated in my house, recovering from covid, with my 2 small kids. Maybe if I keep stuffing chocolate banana bread/cake in their mouths they will give me space? I'll make 2 just in case... THANKS ALISON!

I just made this. It's incredible. It is also glued to the loaf tin 😆 But I'm cool with cutting chunks off and gobbling them up as I go. When I saw in the recipe blurb that this wasn't breakfast I was STUNNED. I thought Alison and I were 👯♀til I read that. Of COURSE it could be for breakfast. But, as ever, she was right. I'd be dead by 11am.
