I do not know you never have this kinds of guide in your country so you never saw it before or you just trolling this guy but it's really rude to the chef, the owner of this restaurant and this youtuber too and of course the owner of this comment. Who would stupid enough to make a fake Michelin sticker like that? Just to cheat the locals?. Lol And If the Thai people did stupid things like that how could Thailand be the most visited country in the world, with more than 40 millions tourists per year before covid.
A mention in the Michelin guide is not the same as Michelin star but it is still quite something. When the competition is so hard that even a consolation prize or participation prize is big enough , you know that the restaurant is good.
The real deal of a stir fried noodle with chicken is in the small alleyway right behind this restaurant. The one shows in this vid used to be really good but the quality kindda drop coz of the increased popularity and traffic.

Restaurants and food vendors like this always use very high heat. Even home cooking, not as high heat as this, I don’t cook chicken for 15 minutes either because it would be overcooked
So the white tape-like thing they put into frying is actually called "Banh Uot" (wet pie) in Vietnamese, not noodle. If made correctly, their texture are soft and a bit sticky why you try to tear them out. Very strange seeing them fry it
The Michelin sticker doesn't bear any relevance in asian food culture. This kind of noodle shop (also known as mee goreng or pad see ew) exist everywhere in southeast asia and there are hundreds more variance of the same meal. Perhaps the michelin rating was given by a random westerner who probably never stayed long enough in asia to know better.
The signature of this dish is its smell, crispy. The way they roasting the noodle and chicken on a charcoal stove.
So simple yet so delicious looking!

I am wondering how well the chicken is cooked. Meats generally takes atleast 15 mins to cook properly.
Small, thin slices like that take less than 1m for med rare and less than 2-3m for well done like chicken
Not for these room temperature, thin chicken slices. Not to mention that wok is super hot, hotter than most conventional stove.
