The only thing I know I do that you don't @sisiyemisi is, I don't cut my garden eggs into bits before boiling,I boil them whole and when it's soften I peel of its skin cz it has, then mash them like you did.😍😍

I love garden egg sauce so much! Growing up, my mum used to place the cut garden eggs on clean broomsticks (there are skewers now) and put in the same pot with the yam so they can cook together. Such a genius way to save time and easily remove the garden eggs when it's cooked!

This source reminds me of my Dad as he is the one that prepares it and we eat it with Yam on Sundays when he is available while I was much younger.
Same way prepared as I can remember but I haven't tasted that over a decade ago and I can't prepare it myself. Thanks for sharing

In Zambia we call garden eggs Impwa. I like it stir fried with okra, onions and bell peppers. I generally don't like the taste of garden egg but love it cooked as a stir fry. I love aubergine. I could eat it everday.

A really nice sauce, tried it a few months ago with eggplant but l don't think it tasted like back home for some reasons... Can you show us how to cook taro, cocoyam leaf sauce, its common among the esans in edo state. It has a bitter taste but goes well with yam, plantain. I think Ghanaians call it nkotonmire, similar to eggplant sauce. Thank you.
