Chunky Garden Egg (Eggplant) Stew With Boiled Yam.

- This was one of the stews in my college meal prep for my husband (then boyfriend) and I. When I chanced upon some fresh garden eggs and some extra sweet pona yams a few weeks ago, I knew without a doubt that I had to make this koobi studded chunky garden egg stew. Oh what a delicious trip down memory lane this was!
Ingredients:
0.8 lb Koobi (dried salted tilapia)
1 large onion
4 medium sized tomatoes
1/2 cup palm oil
2 scotch bonnets (only because they were not hot enough)
3 lb white garden eggs
1.2 lb smoked mackerel
6 eggs
salt to taste.

Yam, especially boiled yam, nicely carved, has appeared this week in many meals prepared by our esteemed Pan-African chefs on UA-cam! The great Kwankyewaa's Kitchen has prepared a healthy and delicious “Chunky Koobi Garden Egg Stew With Boiled Yam!” The ingredients include Koobi (dried salted tilapia), large white onion, medium sized tomatoes, palm oil, scotch bonnet peppers, white garden eggs, smoked mackerel, eggs, and salt to taste. Egg stew/sauce dishes have also emerged as a theme this week! A very tasty egg stew and delicious boiled yam! Carefully prepared by gifted hands! Week three in October 2023 has been very productive and we still have until Saturday night to end the week. We are rich! We are blessed! Thank you!

Our house mate used to come home from nightshift and warm up his kobi soup. I was suffering with morning sickness but couldnt tell him. How I suffered !!! But I do love garden eggs I didnt know you could blend the seeds i always discarded them my husband said they up set him. If you blend it does it help?
Yes, I feel you on that. It takes over the whole house! I typically remove the seeds and blend but they don’t particularly bother me. Please try it. He might like it that way❤
