I made this and it was awesome. My husband is from Nigeria and makes this a lot. I have to say mine tastes better because of this your recipe. He scrambles his eggs; but pouring the eggs into the stew is perfect. Thank you for posting this video.
The tomato recipe is often done here by Filipino families in the Philippines especially when tomato season or when tomatoes' market price is cheap. The eggs are beaten though. And we usually season the recipe with shrimp paste or sometimes fish sauce. It is commonly called "Ginisang Kamatis". Ginisa means Sauteed and Kamatis means Tomatoes.
