I'm African-American. My grandmother (who came from the southern USA) used to make a dish called, "Red Rice" that closely resembles Jollof Rice; even down to many of the ingredients. I was well into my 50s the first time I had opportunity to taste Jollof rice and fell in love with it because it carries the culinary memories of my grandma's cooking!

I've been wanting to make jollof. My children are Asian but we eat food from around the world. We use Jasmine rice and I've seen recipies using parboiled rice but watching this video I know how to adapt this to use with our rice. I will make jollof rice and serve with boiled then fried chicken. My kids will love it. Thanks! My boyfriend also lived for a while in Nigeria with grandparents and he remembers eating this after i showed him the video but was very small so did not remember when i just asked jollof!
