    ONLY thing I would add, Is what an old Cajun friend of mine told me. When you are done with the purge" however you do it", drain the water off where it just covers them in the cooler, And 10 mins before you cook em, get a can/small package of your choice of crawfish seasoning, old bay, crab boil, or whatever you like, and mix it in with them. They will filter that into there body and it seasons them from the inside :)

    Next time you do a Crawfish Boil, when you add the seasoning add the juice from 6 oranges and 3 lemon squeezed and toss in 3 of the oranges and 1 1/2 lemons before you do the rest. Then before the crawfish go in remove the lemon and oranges. You'll really enjoy the extra flavor it provides.

    For all of you trying to point out what is wrong and what you would have done... Cooking things are like chicken, steak or eggs. Sometimes over easy, sometimes scrambled, sometimes an omelette. Roasted chicken, fried chicken, rotisserie, grilled, smoked, etc. There is never one way to cook something. This is a very simple and efficient way to cook deliciously. Just while eating or immediately after don't kiss the baby or touch its hands.

    I ALWAYS puree garlic and onion and a couple of stalks of celery and add that to the pot... because it has been pureed you don't even see it but yet it adds a lot of flavor to the Crawfish.... then right before it is time to pull the Crawfish out of the pot I add my lemon juice and lemons.... oh and by the way I love that table I got to have one

      Joseph Fording
      Assuming your using a 20-25gal pot, I fill it up about 2/3 full of water, add 4 sticks butter, 6 halved lemons squeezed over the water then dropped in, same with oranges too if you like, 1 can of salt, around 16oz of garlic, 8oz of Louisiana liquid boil, the amount of dry crab boil for how many bugs your cooking, then add taters and boil them till "nearly done", not completely, then add bugs, mushrooms, sausages and corn and bring back to a boil and cook until bugs are floating good. Usually 5 min!! Then kill your heat, add a thermometer, stir and drop in ice until water reaches 150degrees. Let sit at least 5 min before removing! The longer it sits, the hotter it is!! We let the last few batches sit 10-15 min for spicier bugs for the grown ups!! Hope this helps and wish I was there with y'all this weekend!

    As a native New Orleanian, you did ok for someone not from here. You re missing Garlic, lemons, cayenne, and some people use oranges. Leaving the whole cloves of garlic out is a cardinal sin down here. You need at least 1 large container of cayenne per boil, and we ll use the same pot for multiple boils instead of having multi pots so that each boil gets spicier as the day goes on. Let the kids and women eat first so they can handle the spice, and the boys, men, and super women eat later in the day as the boil gets spicier.

    Very interesting! I'm fascinated how you Americans boil crawfish, i've noticed alot of Americans don't eat the claws?? Here in Sweden we boil our crawfish in dill, beer, salt, water and onions.And we never kill our crawfish in the pot with the seasoning, we use a separate pot for that :)

    • @jincyquones
      @jincyquones 6 років тому +4

      Well, I don't think most Americans will have ever actually eaten boiled crawfish. The only area where they're eaten regularly by "most" people is here in southern Louisiana. Most of the boiled crawfish elsewhere in the U.S. is extremely expensive, poorly cooked, and/or the crawfish are often imported frozen from industrial shellfish farms in China, whereas no respectable seafood restaurant in Louisiana would ever serve boiled crawfish that weren't swimming around a local swamp not long before (no one down here would eat them otherwise).
      The guy in the video is from Alabama, but he seems to have done a good job by our standards. He did it pretty much how it would be done here... all in a big pot with whole potatoes, corn cobs, sausage, and lots and lots of seasoning. As far as eating the claws, we do absolutely eat the claw meat. Down here, it is also tradition to literally suck the juice out of the head with one's mouth after pulling it off the body!
      Funny about the separate pot thing... I could probably walk up to anyone down here and ask him if they think crawfish should be killed before being set to boil and they'd probably either scoff or laugh in my face. Haha!
