Do not get an ecobee! The perk of a variable speed handler is a functionality called Trane Comfort-R it dehumidifies using a ramp up with the blower motor. You have to have the trane compatible thermostat to communicate with the air handler for this feature and other features. I’ve done extensive research and I’m also an owner of one, so to save you the headache I endured by looking for compatible thermostats and contacting the trade site, you have to have a trane thermostat. Small price to pay and worth it. the people who installed mine initially said “any thermostat is fine” no, it’s not. It’s an advanced trane if you don’t have the ability to use all of its features you’re better off getting a rheem.
Will the XR16 air conditioner work with other thermostats (nest/ecobee), or do they exclusively need to use the trane thermostat?

The humidity says 62 And it’s a variable handler, Was that right after an install?

I'm pretty sure the two stage compressors are not variable units. I'm reading the xv17 & 20 units come with variable compressors.
