i'm so glad you tried out an indian recipe! Amy's an amazing chef! (hpe i spelled the name right). in india, or maybe just where i live, we make aata paranthis to have everyday, and occasionally have the maida ones. i know you once started a travel around the world series. i hope you get on it back pretty soon. if you ever visit india, i know you are going to be surprised we never measure, wether it's spices, maida, aata desserts or anything. any indian, brought up in india, might rather ruin the recipe when they particularly measure! i once tried too measure tea leaves and sugar while making tea, and it wasn't good... looove your videos!
Thank you for sharing, Tanusha. We do the same back home when baking, but that is because we are quire familiar with those recipes. I’m afraid, I will have to measure when it comes to foreign cuisines if I’m going for a good result.

this is so similar to what we make in Trinidad and Tobago but we call it "buss up shot" . Our dough has baking powder in it and while resting its coated in oil. basically same process going forward except when the paratha is finished we take a wooden stick and beat the paratha until it tears hence the name "BUSS up shot", "buss" meaning burst lol we eat it with curry. I love the videos of other cultures in baking, great job!

Try without baking powder it will never disappoint. Baking powder is not good to health. In India we dont use baking powder nor baking soda mostly other than cakes and pastries
Same here in India also, in restaurants they will beat it on the wooden or iron rack. They will apply generous amount of oil to the dough balls and rest it for atleast 30 mts.

How beautiful are those parathas. Wow, loved the process, so understated and nonchalant. In fact, we had them for dinner today in Bangalore, India. I'm Sindhi, and we make a somewhat similar paratha - except that we use peanut oil instead of butter and we also spread red chilli or black pepper powder and roll it up. They're are had at breakfast with thick homemade curd, completely gorgeous.

It’s basically like roti (use the same dough) but you roll it a bit thicker and you cook it with oil/butter (Ami is making it a bit complicated ) 😊

Another easy tip,
You can very well make the dough using your stand mixer but the dough should be of medium soft not stick dough.
Then knead it using your hands by atleast 5 mts It's good exercise for your hand. And in case ,if the dough is sticky please add little flour and then knead it again without any cracks.
More the knead it will be good.
You can also add little bit of dried herbs in the dough.
You can do this either in All purpose flour or wheat flour. Strictly not any other flour.
If you dont have iron tava dont worry make this in your normal pan which you use for making pan cakes.
The more the oil you apply it will be crispy.
And if you find if you are not able to make it , get the ready-made parathas and follow the instructions as mentioned and do it.
Cooking is simple don't get it complicated.

I do have a request, Would you be able to make some recipes for kids like what you used to feed baby george as i have a two year old daughter and she is super fussy and doesn’t eat much.... it would really help me to have some ideas
Hi. Georgie is eating pretty much what any two year old eats. Fruits, steamed vegetables, sometimes a bit of pasta, breads. I’ll look into it, but it’s really just food that’s been steamed or food cut into small pieces. Or small portions of what we eat.

This dish has travelled to many parts of the world, including USA, Europe, Canada, Singapore and Malaysia. In Trinidad and Tobago, the meal differs from the South Asian version which is generally larger in size and thinner in density.
I love flat breads as it has so many variations across countries. And they all taste good!

Could you please do a video about the protein content in different flours and how it affects the results in a recipe. Chocolate chip cookies are bake very differently with different four and flour is different in every country.

This is a paratha, yes, but under the umbrella of paratha", this one is called laccha paratha, laccha means layers.
there are many other kinds. some filled, some plain, some with 3 layers that are more triangular, some with no layers.
So if you are in an indian restaurant or india, and want to have this particular paratha, ask for Laccha paratha.
or they will serve you their version of a paratha.

Can you use gluten-free flour??
I have not tried this with Gf in person but for most recipes which don't use yeast as a raising agent, you can substitute GF all purpose blend flour (which usually contains xanthan gum as a binding agent) for all purpose flour (wheat flour), start with 1:1 ratio. A good rule of thumb to keep in mind while alternating the recipe: note to hold back some liquid by using up to 3/4 in one go and adjust it accordingly.

Sorry Gemma, This is not the authentic receipe. This is not flaky at all.
Guys if you want to make this parathas please do as below.
Knead the dough using your hand.Just add salt and water to knead the dough. Dont make the dough too soft nor too hard.
Make balls and apply oil on the dough balls and set aside for atleast 30 mts of time.
Then roll the dough using rolling pin as much thin you can. You can dust some flour and roll it.
I would suggest any type if oil is best when comparing to butter.
Once you rolled the dough very thin, apply generous amount of oil on it, or otherwise you dont get the flaky layers.
Be generous in applying oil.
Then using a knife make small cuts with all over it. Then roll it and then bring it to the center.
Then flatten it using your hands not by the rolling pin, it is easy to flatten using your hands. As this has been applied oil .
Dont flatten it very thinly..You youst have to flatten .25 inches.
Then put it on non stick pan or any whatever you similar kind of it..
Apply oil on both sides and cook until you get the golden color .
When you apply oil ,then only it will be more crunchy.
Apply on both sides and cook.
After it is cool, you have to compress on both sides ,so that it will be separated as layer's.
You can eat this with any curry of your choice preferably chickpeas gravy or chicken or mutton gravy.

We call it as Malabar paratha , latcha paratha, bun paratha and etc..
It was actually flaky. Perhaps Ami just simplified the process for this, but it really came out flaky and tasty, too. I believe yours is flaky too, just a different process. You will be surprised at how many versions are put forward for this recipe, as I receive quire a lot of requests to feature its. And I think most of them are authentic, though different from one another.

You can stuff them. I still have to experiment with that. But I heard they’re really good.

The bread is a middle eastern bread. Hindus never made bread. Due to Muslim lived in India for thousands of years.

Mixing dough with your fingers whilst wearing nail polish is a huge no no. Rings also should be taken off.
